We are hosting the salad course of a progressive dinner in our neighborhood. There are two other courses (pasta and dessert). 19 adults and 7 kids (all under 8) have RSVP'ed to the event. Here is what we are planning on serving. Do you think this is enough food if each of the salads fill a large salad bowl?
2 loafs of french bread sliced with olive oil and butter to spread
Italian pasta (1 pound) salad with salami and various veggies
Spinach (2 bags) salad with strawberries, feta, almonds, and poppyseed dressing
American salad: Mixed greens (2 bags), chick peas, shredded carrots, cucumber, croutons, shredded cheese, tomatoes, and french dressing
Drinks: Water, Iced Tea, Wine

I agree with AKG and Terp--I don't think it will be enough food. Though I don't ever buy bags of salad, I do know that regular grocery sized bags don't serve many people (fyi, heads of lettuce do tend to yield much more bang for your buck, if that's a concern for you). If it's restaurant sized, then I think that might be a tad better. Also, I would plan on everyone having at least one slice/sliver of bread--and if you are trying to feed 25 people out of 2 loaves, depending on the size of your loaves, if you have to cut them small, you'd probably want to measure 2 slices per person. Kids love bread and if you are the first stop, people may eat more just because....
I always tend to over do it because my mom always said if you are entertaining nothing is more embarrassing than running out of food.
I'm with Derky...I rarely buy salad bags unless I know we will only be eating one salad during the week. My favorite blend to fix up is Romaine, Green Leaf and Spinach. If I want to add more color I add one bag of Spring Mix.
Depending on how long everyone is going to be socializing at your home, I would maybe add more bread or maybe a different kind of bread. The more people graze the more likely they are to pick up items like bread.

I think that's a wise decision! The good thing is that if you do have any leftovers you and your DH can always eat it.
BTW, I do think your options sound GREAT and well rounded.
