Holy Moly, It's freaking freezing this AM. I got up early to make sure SS was dressed warm enough, and fixed him a breakfast wrap as well.
My weekend was ok, not to exciting. I went down to ArtPrize for a few hours Sunday with a couple of friends. We skipped the GRAM since the line was wrapped around Rosa Park. I did see I pretty cool Brass looking sculpture of St John in front of St. Mark's Church on Division. I think I've seen about half of the top 5, not sure I'll see the rest.
I'm working on gathering some freezer friendly recipes since we have a small upright freezer in our garage now. Other than soups and Pasta's I'm not sure what to make? DH doesn't like pasta very much, once in a while is ok. SS will eat pretty much anything right now since he has become a endless bottom less pit for food, especially on the weekends.
How was your weekend? Anything your working on?
Re: Good Flipping Freezing Morning.
Burritos you can make ahead and freeze.
I had a pretty good weekend. Saturday was a lot of fun, and Sunday I just lazed around all day. T's cough was horrible yesterday, and he cut another tooth sometime this weekend and was cranky because of it. I was actually able to finish a book yesterday though.
Be careful freezing pasta. It gets mushy. You can make the meal with everything but the noodles, though!
My favorite thing to make and freeze into individual portions is this recipe for White Chicken Chili:
White Chicken Chili1-2 lbs chicken. Cooked & cut up
1 48oz jar of Great Northern Beans
1 16 oz jar of Hot salsa (medium if you don't like it too hot)
8 oz of Monterey Jack Jalapeno cheese (or just MJ)
2 Tbsp Cumin powder
Mix all ingredients together & simmer 2-3 hours. I threw it all in a crock pot
I serve it w/ tortilla chips!
I don't stock cumin powder, so I never put it in there. It's good without it. I usually use whatever salsa we have, usually medium, and a block of Pepperjack cheese. It's spicy without too much spice. Mmmmmmmm. It's one of my faves.
Morning!
The weekend was....interesting.
Saturday morning was fun. I went shopping with my BFF and scored a $17 top from The Limited. It's super cute! Saturday evening...well we somehow got roped into going on a party bus for the owner of Nick's workplace's nephew's girlfriend (I think I got that right). He's a really nice guy, and his girlfriend just turned 21 (guy is young too, 22 I think) so he decided to get her a party bus to celebrate. I was not looking forward to going on a party bus with bunch of drunk 21 year olds. It was exactly what I thought it would be. Nick and I ended up ditching the group for half the night. We strolled off to Peppino's and had a late dinner and watched the end of the Florida/Alabama game. We met up with the rest of the group on the bus where we proceeded to go to Sixx night club.
It was, uh, interesting. We walked in, and walked right back out. Haha. We spent the rest of the evening on the bus with another guy who wasn't allowed to get in because he was too drunk. We finally talked the bus driver (who was actually really cool) into dropping us off to where our DD was parked. By this time it was 1:30 and I just wanted to go home. Haha. Going clubbing is totally not my thing. I'd rather find a nice casual bar to just hang out at. Good times, good times.
