Re: pumpkin chocolate chip cookies ?
I know this isn't what you asked for, but they're delicious if you want to try blondies instead of cookies! I used reg. choc chips instead of white with the butterscotch... Delish!
Pumpkin Blondies
I made these on Sunday:
http://allrecipes.com/Recipe/Pumpkin-Chocolate-Chip-Cookies-III/Detail.aspx
The only change I would make is reduce the chocolate from 2 cups to 1 cup.
Me! I know a bunch of people made different variations of them.
Pumpkin Cookies:
1 cup sugar
1 cup canned pumpkin (NOT PUMPKIN PIE FILLING!)
1 cup shortening
1 egg
2 cups flour
1 teaspoon cinnamon
1 teaspoon baking soda
? teaspoon salt
Mix sugar, pumpkin, shortening, and egg. Add flour, cinnamon, baking soda, salt. Add pecans as desired.
Bake at 350 for 12 minutes.
This is my granny?s recipe, and was one of Josh?s fraternitybrother?s favorite thing I made while we were at Tech. He calls them ?PunkinPillows.?
punkin pillows - there it is. thanks dear!
and thanks for all the links ladies. I have 8 small cans and 3 jumbo cans of pumpkin in my cabinet, so I certainly have enough to try these different variations!
No problem... and your siggy pic makes me almost pee in my pants laughing. Fantastic.
I was going for a more "tough gal/intimidation/mean mug" approach, but I'll settle for pants peeing.
Did I say pants peeing? I meant terrified and consumed by fear. Maybe I'll become an Ohio fan... Tech really hurt by feelings by losing to Iowa State on Saturday. Seriously? Iowa state? Tommy Tuberville is NOT impressing me... On Sunday, I saw a kid in an Auburn shirt and I wanted to hit the child... Probably not a healthy reaction, but they can have him back. So embarrassing to lose that horribly.

Mmmmmm, pumpkin pillows. I'll have to make some for this weekend. It is Thanksgiving afterall.
Erinn, did you sub out any of the shortening for butter? I know we were discussing that last year....
We'll just not tell H about this little fact, m'kay?
Raynes - yes, I actually do 1/2C shortening and 1/2C butter. I remember last year that was the best mix (I had done all shortening and all butter... 1/2 and 1/2 was the happy medium)
They just seem a bit too soft/ mushy/ not crisp like a cookie this batch... must be the random can of pumpkin i picked up.. it was all I could find, I guess it was for pumpkin pie....

Not what you requested but add a can of pumpkin to a box of devil's food chocolate cake and make into muffins. Amazing.
ETA: Don't add anything else to make the cake. Just the pumpkin + mix.
