What are you favorite soup recipes?

I've been trying to expand my 'foods I cook' list and need some good ideas. Lately, assuming it's because of the cool weather, I've been craving soups like crazy! Whatcha got?

  • I was just going to ask if anyone had a good chicken tortilla soup recipe! Please share if you do!

    This is not soup, but I like to cook salsa chicken in the crockpot because it is super easy and ready to eat when H gets home from work.

    Salsa Chicken

    3-4 chicken breasts

    1 packet taco seasoning

    1 C salsa (can add more if you want)

    1 Can cream of chicken or cream of cheddar

     

    Place chicken breasts in the Crockpot and pour taco seasoning over them. Combine salsa and cream of chicken (or cheddar) soup together. Pour over chicken and cover. Cook on low for 6ish hours. Can be served on top of rice. Top with shredded cheese.

  • PW's sherried tomato soup is my fave. I change up the recipe just a bit. I include about 2-3 cloves of garlic with the onions, and instead of the chicken gloop, I add a very generous sprinkling of parmesan cheese. I'm not a fan of basil, so I leave it out. SOOOO yummy.

  • Chicken tortilla soup:  Less brothy, more cheesy.

    Ingredients:

    1 package boneless skinless chicken breasts 

    Chicken broth (2 boxes, 2 cans) or use 1/2 jar of Better Than Boullion

    1 can cream of chicken soup

    1 can Rotel tomatoes

    1 C skim milk

    12 oz of 2% Velveeta, cubed

    1/2 of a chopped onion (I skip this)

    Tsp garlic powder

    Tsp chili powder

    Tsp salt

    Tsp black pepper

     8-10 small flour tortillas

     

    Directions:

    Make 3 quarts of chicken broth.  In another pot, boil chicken in water.  Once cooked through, shread.  Boil onion in broth until tender.  Combine all ingredients (except tortillas and Velveeta).  Cut tortillas into 1 inch strips and add to soup- cook for 15 minutes.  Add cubed Velveeta and slowly boil until completely melted.  Serve with tortilla chips for some crunch.  This is a WW recipe if you use RF ingredients when possible.

    Okay, that sounds heavenly. Do you substitute anything for the Velveeta? Velveeta kind of weirds me out a little bit, and I'm wondering if there is a creamy-enough cheese that would work in its place. 

  • DH doesn't really like soup so we stick to stew, chili, and chicken and dumplings.  Here's the recipe I'm trying out tonight.....

    Crockpot Chicken and Dumplings:
    2 c. cooked chicken
    2 cans cream of chicken soup 
    2 tsp chicken bouillon granules
    salt and pepper
    2 soup cans of water
    1 can refrigerated biscuits

    Combine all ingredients except biscuits in crockpot.  Quarter the biscuits, then gently stir them in.  Cook on low 4-6 hours.
    This is the first time I've used this recipe, so hopefully it's good! :)
  • I just use the 2% velveeta... And yes, it kind of gives me the creep too, but this soup is SO effing good.

    This IS great soup. Chicken boullion (sp) cubes gross me out, though, so I leave them out, too.

  • White Chili (soooo yummy!!)

    1 lb boiled, shredded chicken
    2 cans great northern beans
    2 cans rotel (we use one hot, one regular-we like it kind of spicy)
    2 cans chopped green chilies
    2 cans chicken broth
    2 cans green enchilada sauce

    Put everything in the crockpot, keep on low for several hours. Top with crushed tortilla chips, cheddar cheese, and sour cream.

    GREAT for a chilly day :)

  • Super easy taco soup

    1 5oz can chicken (I leave this out somtimes if I make it with quesadillas or something)

    1 can corn with liquid

    1 can pinto beans (the big can--28oz I think)

    1 can fat free refried beans

    2 c salsa

    2 c chicken broth

    Heat all in sauce pan and serve with sour cream and/or cheese
