leftover pumpkin pie filling?
I think I've got about a cup and a half left and don't want it to go to waste. I've read that you can cook it on the stove so that it gets thicker and eat it as a pudding, but I'd rather come up with something else if possible.
I'd love to make some kind of baked good, but I'm not sure what other ingredients - and what quantity of ingredients - would work with the amount of filling I have.
Do you girls have any good recipes I could try??

I've never tried this myself, but maybe you could try to rig up some dort of oatmeal cookie with it or something? Since it's extra it could be worth the experiment.
Do you have dogs? My moms dogs LOVE pumpkin. You could make their day by adding some into their food.
Sorry, I don't know what to do with just 1.5 cups.... pumpkin whipped cream??
I know, it's hard to work something out! I think I might be able to make pumpkin bread or something, it' just hard to figure out how much of the other stuff to add now that I've already got the filling done. Rigging up some pumpkin oatmeal cookies might work though.
Oh, and I don't have any dogs otherwise I'd love to treat them.
Is it pumpking pie filling or straight pumpkin puree? If it's pie filling...never give that to your dog!!! Only the straight puree is okay for dogs.
Anyhow, depending on what it is you could make muffins or bread or cookies or even pumpkin butter.
It's pumpkin pie filling, the rest of it was already used to make mini pumpkin pies (so I already added eggs, evaporated milk, spices, etc.).
Don't worry, no puppies to give it to, but that's good info to know!
It may be too late, but this is a recipe from the in-laws, and it is delicious! Plus, I don't know if you'd have all the ingredients on hand (e.g., gelatin). But, it is really good!
Pumpkin Delight
FIRST LAYER:
1 3/4 cups crushed graham crackers
1/3 cup sugar
1/2 cup melted butter
Mix and press into 9x13 pan for crust.
SECOND LAYER:
2 eggs
3/4 cup white sugar
1 (8 oz.) pkg. cream cheese
Beat until smooth and creamy and pour over crust. Bake at 350* F for 20 minutes. Cool
THIRD LAYER:
1 ( 16 oz.) can pumpkin
3 egg yolks ( save whites )
1/2 cup sugar
1/2 cup milk
1/2 tsp. salt
1 Tbsp. cinnamon
1 envelop Knox gelatin, dissolved
Mix the first 6 ingredients. Cook until thick, stirring frequently. Then add 1 envelope unflavored gelatine which has been dissolved in 1/4 cup cold water. Cool.
FOURTH LAYER:
3 egg whites
1/4 cup sugar
Beat 3 egg whites. Add 1/4 sugar and fold into cooled pumpkin mixture. Pour over crust. Refrigerate until set.
FIFTH LAYER
Cool whip or other whipped topping.
Spread with Cool Whip.
