I made the best...

chili yesterday, completely by accident!

HH went to the store for me with a list.  It included stewed tomatoes - he brought home sliced stewed tomatoes.  I was like "Have you ever eaten chili that had sliced tomatoes in it?"  Lesson learned, next time I'll write "diced" on the list.

Then I wrote down two items incorrectly. I wrote tomato sauce instead of juice and I was picturing kidney beans, but wrote down navy beans. HH forgot his phone at home, so when he had questions, he couldn't ask and just went with exactly what was on the list.

So I improvised. I cut up the tomatoes myself and used one can of black beans and one can of white navy beans, along with the tomato sauce (with a cup of water added), lean hamburger, diced onions, chili powder, cayenne pepper, and a big spoonful of splenda to cut through the citric acid from the tomatoes. 

It is so-o-o good! I'm eating it for lunch right now.  Next time I'm going to add some more chili powder and cayenne pepper to spice it up a bit. I should probably measure it so I know how much I'm putting in. I'm terrible about dumping and then not remembering what I did.

  • I'm not a fan of regular chili, but I love white chicken chili! My MIL makes it, and its amazing! I'm going to get the recipe from her and make it myself, its one of HH's favorite foods. I meant to get the recipe last week and forgot. I hope it turns out when I make it.

    I do make a mean hot dog chili though! I add chopped onions to ground chuck and cook until brown. Drain the meat and add ketchup, salt, pepper, chili powder, garlic powder, paprika, oregano, and basil. If I'm in the mood for spicy chili I add crushed red pepper flake. I never measure anything, I just add stuff till it tastes good.

  • Something I really want to make or find a recipe for is a green chili recipe. I used to eat it at friends house when I was little but never found it. UGH! One day I will find it. 
  • I just made some super good chili last week!  And I never measure anything!!!

     Lean Ground Chili Meat, onions, garlic, chipotle peppers, roasted poblano peppers, chili powder, smoked paprika, cumin, ground coriander, garlic powder, cayenne, kidney beans, salt, pepper, beef stock, tomato sauce, tomato paste, beer (Shiner is a must in Texas)  - Top with sharp cheddar and red onions... YUM.

    And I make sweet corn cakes to eat them with.  Follow the corn cake recipe on the box of Jiffy cornbread, using buttermilk instead of milk, add frozen sweet kernel corn and shredded cheese (I like pepper jack) - super yummy.  Especially with a spicy chili!
