Chicken Pot Pie

I've been making this for a while, but last nights was the best I'd every made so I thought I'd share the recipe with you ladies. This is my Mom's recipe, I'm not sure where she got it.

1 box refrigerated pie crust (2 crusts total)

3 cans veggies (I use 1 can of mixed, 1 can of corn, and 1 can of diced potatos but you can use whatever combination you want)

2 cans cream of chicken soup

2-3 cups cooked chicken diced or shredded

 Mix soup, veggies, and chicken in bowl. Spray pie pan with cooking spray. Lay one crust in pan and fill with veggie mixture. Roll second crust over the top and crimp the edges. Poke holes in the top with fork or knife and brush melted butter over the whole top. Bake at 425 degrees for around 40 minutes or until top is golden brown.

  • I wonder if this would work with fresh veggies if I sauted them first. I don't use canned veggies at all! I will let you know when I try it. UGH when it gets cooler as it is going to be 90 degrees today I want cold weather so I can try cold weather food!
  • I wonder if I could do this with tofu for my kids instead of chicken as well hmmmm

  • I don't see why you couldn't use fresh veggies or tofu. I really like frozen veggies because they taste fresher to me, but HH doesn't like frozen corn. I always buy Green Giant canned corn for him, he loves it. Canned veggies are just easier for us really. I would love to use fresh more, but we just don't have the time.

  • I guess I am spoiled living in Monterey for 14 years (salad bowl of america) I just got used to doing fresh. My parents have a garden as well so it just the way I do thing. Nothing wrong with canned or frozen. 

    My girls well 2 out of the 3 are vegitarians so I make 2 of almost everything just out of habit.

  • I love easy recipes! I just e-mailed this to myself to add to my book of favs that I've just started.  I don't cook much because our kitchen is SO small and we don't have any counterspace, so it makes me crazy to get anything done. But when I do, I like recipes with very few ingredients. Thanks for sharing!
  • I did almost the exact same recipe last night.  It was smaller portions, though - 1 can (of Vegall - mixed veggies), 1 can cream of chicken soup, 1/2 diced onion, shredded chicken from 1-2 breasts (on the bone), salt & pepper.  I boil the chicken first for about 40-45 minutes until it's done and tender.  Then I take it off the bone with forks/my hands.
