Katy - Chicken pot pie

Ok so I pretty much went with what you did. And it turned out great. Thank you this is something that we will do more often and can't wait to have some at lunch time

Chicken Pot Pie/Veggie Pot Pie Making them both took a total of about 2 hours to make including the cooking time.

I did 3celery stalks, 1/4 of a very large onion and 2 potatoes 1 heaping tbls of minced garlic Seasoned a bit more with mrs dash herbs. I boiled them all in chicken broth with a package of boneless chicken tenderloins until chicken was cooked. Thickened it with 1/2 a cup of chicken broth and 2 heaping tbls of cornstarch added frozen corn and peas 1/2 a bag.  Premade Crusts and cooked on 400 for 40 minutes.

  VEGGIE Pot Pie-

For the girls I used organic (only kind they had)Vegetable broth. Did 2 potatoes, 3 celery stalks 1/4 of large onion heaping tbls of minced garlic boiled until potatoes were soft. Also added Mrs Dash herb. Took half a cup of Vegetable broth I left on the side added the 2 heaping tbls of cornstarch mixed then added and thickened till good consistancy. Added 1 Zuchini cut in chunks,1 yellow squash cut in chunks, 1/2 bag of frozen peas n carrots. Added to premade crust.  Cooked at 400 at 40 Minutes .

  • I meant to post about this too. I made it this weekend and we loved it!! Dave especially, and it's not normally his kind of food :)
