Jen F did a bunch of canning this summer, maybe email her? We made some jelly this summer, and it was really easy. If you buy a package of Ball cans, they come with directions on how to physically do the canning (like how long to leave in hot water, etc).
You can find lots of recipes online for what actually goes inside. DH found a recipe to make our jelly. However, cross check a couple of recipes if you do this b/c ours didn't say anything about using pectin, which is apparently what makes jelly gel, so it came out a little runny.

I do know that Costco sells pretty reliable items. I'd get the book, check it out-if it stinks, return it. Costco has a 100% satisfaction on every item they sell.
