With Andrew starting his new job on Monday, I will now be the first one home. Which means I will have to get dinner ready and feed Xander all before Andrew even gets home. I am not looking forward to this at all, I don't like to cook really. I know how to cook, but I only have a few meals I cook regularly and I know Andrew will grow tired of them quickly. I plan on using the crock pot more now since trying to get dinner together and chase after a 11 month old is going to be hard.
So what are your favorite crock pot meals?

It's not a crockpot meal, but I make baked chicken often. I think you'll like it because you can start it and let it cook while you feed Xander.
Take chicken breasts, I use them frozen, and place each chicken breast on a sheet of tin foil. Season as you would like. I usually use pepper, garlic powder, Lawry's, and lemon pepper seasoning. Put a generous scoop of butter on top of the chicken. Make a sort of "pouch" with the tin foil, folding the top and bottom ends over and then tucking the left and right sides over the top. (Does that make sense?) Cook at 400 degrees for an hour.
You can probably even put some vegetables like onions, peppers, and other stuff in there if you like that kind of stuff. We usually pair with a potato and some sort of frozen vegetable.

12/10 - Unmedicated cycle due to RE not doing treatments in December = BFN
1/11 - 100mg Clomid + trigger + IUI + Estradiol + Progesterone = BFN
2/11 - Same sh!t, different month = IUI cancelled due to no response = BFN
IVF #1 - Start stims (Follistim) 5/10, add in Ganirelix 5/14
ER 5/21 - 13 retrieved, 7 mature, 5 fertilized; ET 5/26 - transferred one perfect 1AA blast. 3 snowbabies.
Beta 6/3 - 15.8; Beta 6/7 - 21.8; Beta 6/10 - 7
FET - Transferred 1 AA blast 7/11. Beta 7/20 - 311! Beta 7/22 - 784!! First u/s 8/10

I make a version of this w/o the cream of whatever soup and use frozen, so you can definitely do that. I also usually do 4 chicken breasts, 2 cups salsa, bag of frozen corn and 1-2 cans of black beans depending upon what you like. Add some sour cream at the end just before serving. We serve with a side of spanish rice and roll into tortillas. For us, 4 breasts usually makes enough for 2 dinners and I freeze the other half for later.
I also suggest freezer meals, they are a big help since I work 4-10s and then go to yoga, DH can cook, but he likes to have some guidance. Pasta dishes are great for this.
I second the crockpot 365 blog, I'm going to try her potato soup next week for a work thing.
I also love the crockpot b/c I get to "sneak" in more veggies that DH will normally eat. He's not big on beans, but throw it in with taco fixings, he loves it. Not big on onions and carrots, throw it in with a pot roast, he's asking for seconds, lol.
ETA: If you have a programmable crockpot, I find even on low chicken cooks quick, so I usually set it to 6 hours since it will be on warm for another 3-4 depending upon when we get home and keep cooking.
Also for my salsa chicken recipe, sometimes I need to add a bit of water, depending upon what kind of salsa I use.
