I need a recipe or a general idea of some sort of comfort food. Jesse's granny has been fighting some sort of stomache bug for over a week. (She is 86 so the littlest thing will set her back for a long while.)
I am wanting some sort of casserole that Jesse can pop in the oven for them... Got any ideas? I thought about making some potato soup and then something else to go with it but I really think it is best to go with a one dish meal since my DH will be cooking/ reheating it.
Re: Comfort food?
I like homemade mac & cheese, and that's something you can make in advance and then pop in the oven later (before you put it in the oven, sprinkle shredded cheese on top and (if you want) bread crumbs). The Pioneer Woman's recipe is my favorite, even when using 1% milk instead of whole like she recommends. Plus if you want to add some type of meat, it's easy. I've made it with ground beef, chicken, and ham before, and all turned out great (especially the ground beef... YUM).

I hope she feels better soon!
