I need a good chicken breast recipe

no Chicken Parm, b.c we just had spaghetti.  I am starting to feel like I cook the same thing when I used to be really experimental.  Help!!

    Chicken, Cashews & Broccoli Stir Fry

    You will need:
    2 tsp. olive oil
    1 lb. boneless skinless chicken breasts, cut into thin strips
    2 cloves garlic, minced
    5 cups  small broccoli florets
    1/2 cup water
    1/4 cup  Catalina Dressing
    2 Tbsp. lite soy sauce
    1/4 tsp. cayenne pepper (optional)
    1/4 tsp.  crushed red pepper
    1/4 cup Cashew Halves with Pieces

    Heat oil in large skillet on medium-high heat. Add chicken and garlic; cook 6 to 8 min. or until chicken is done, stirring occasionally. Remove chicken from skillet; cover to keep warm.

    Add broccoli and water to skillet; cover. Cook 3 to 4 min. or until broccoli is crisp-tender, stirring occasionally.

    Stir in chicken and all remaining ingredients except nuts; cook 2 min. or until heated through, stirring occasionally. Toss with nuts and serve immediately.



  • i make this chicken rub (SO FRIGGIN GOOD) and rub the chicken in it, then heat pan, add a little oil and cook until done.  i could eat this every night.  that's how much i like it! 

    rub:

    1 1/2 tbs salt

    1 tbs onion powder

    1 tbs garlic powder

    2 tsp parsley

    2 tsp black pepper 

    1 tbs paprika

    mix it all together and keep in a jar.  super easy and SO good!  you can adjust it to your taste, but this is the blend that i've found i like the best!

  • DH's favorite chicken dish that he requests all the time is my Hawaiian Chicken.  It's just chicken, sweet baby rays honey BBQ sauce and a can of diced pineapple (with the juices).  I usually make brown rice and broccoli on the side.

  • I made this the other day and it was yummy.

     Herbed Artichoke Chicken

     2 or 3 chicken breasts

    1 can artichokes

    1 14oz can diced tomatos  (I used chili ready)

    1 cup chicken broth

    2 tsp curry powder

    italian seasoning

    salt

    pepper

    1 cup water

    Cook in crock pot on low 6 to 8 hours.
