I need new dinner ideas. My dad was the cook in the family and he'd always do elaborate roasts dinners, which I haven't tried to tackle yet. I need more of the dinners that take less than an hour, prep included.

I don't have the recipes with me since I'm at work but I'll give you my meal plan for the week.
Sunday: Scalloped Potatoes and Ham
Monday: Lasagna Roll-ups
Tuesday: Slow Cooker meatballs over egg noodles
Wednesday: Smothered chicken and green beans
Thursday: Spaghetti Pizza
Friday: BBQ's
Saturday: Egg Salad for Lunch/ Eat out for dinner
I always do meal plans for the week or I never know what to make and then we end up just eating out. Most of these recipes come from my google reader but a lot of them you can find on allrecipes.com. If I remember I'll try to start doing a meal plan post at the beginning of every week so we can all get ideas from what others are doing for meals.
i need to plan out a week of meals like that. it would help me alot with shopping and stuff.
one of my easier go-to meals:
- brown rice (made in the rice cooker...about 40 minutes)
- pork chops cooked in a pan with olive oil (and seasoned with mrs dash)
- spicy asparagus (sauteed in pan with olive oil and lots of chili powder)
you can start the rice first, start the pork chops about 20 minutes in adn then start the asparagus like 10 minutes before the end, it all gets done around the same time and all under 1 hour. and so tasty.

Kim, it helps so much with grocery shopping. I honestly don't even remember how I used to get through shopping before I started meal planning. Doing it this way helps not buy random things that aren't needed and it helps with having all the ingrediants for meals so you're not making multiple trips to the grocery store per week. Plus it helps save money since your not buying stuff you won't use or don't need.
I'll never go back to the old way of just going and grabbing stuff off the shelves.
My favorite "new" dinner is baked tilapia with frozen vegetables. It's the easiest thing in the world. I've done this both wtih fresh and with frozen (from Trader Joe's) tilapia. Preheat oven to 350, in a covered dish, bake the tilapia and frozen veggies. If frozen fish- about 30-35 min, fresh fish, 20-25 min. Then- I use a little bit of butter (less than 1 Tbsp) and some white balsamic vinegar to make a quick sauce to serve with the fish. I've served it with both rice and pasta. I think i just used whatever we had leftover.

-beef skillet stew (i just made it into a stew and skipped the skillet, it was from yahoo shine recipes)
-turkey pineapple melts (So easy and delicious you can either use turkey or ham)
-Three cheese mac with ham
-potato chip chicken
-chicken country captain
-chicken parmesan
I always have taco stuff for a back up or stuff to make enchiladas (those take less than 30 min) I'm all about short time recipes as I have a little one too.
