Thanks to my bright idea, we're having a potluck at work tomorrow for Halloween and our weekly meeting. I had planned on making Chile Verde, because let's face it I make one killer Chile Verde. But, I'm not sure if I want to make it, only because it takes so long to make.
Any ideas for an easy potluck main dish? I was thinking about a mac n cheese or some type of caserole dish.

oooh, those are super easy to make...
frozen meatballs, 1 jar of chili sause, 1 jar of grape jelly...low for 8hrs or high for 4 - they're so yummy!!!
OR
pasta salad, potato salad, taco salad dip, spicy nacho dip
if you are going for main course, i would either do the chili (crock pot?) or macaroni and cheese. YUM. enchiladas are pretty easy too.
can i come to your work tomorrow?

I usually do witches brew for halloween potluck (super easy)
1lb ground meat (hamburger or turkey), browned
3 cans minestrone soup (+ water if condensed)
1 can ro-tel tomatoes (drained), whatever heat intensity you like
1 can pinto beans (drained)
Brown the meat, then throw it all in the crock. We're having it today! Along w/ my fab halloween cupcakes.
OH OH! I like the enchiladas idea! They're easy and yum-eeeee!

Deb do you have a stove at work? I would do the enchiladas or mac & cheese but worry about the reheating.
Can you do a different chili in the crop pot?

I didn't even think about making something in a crock pot...duh! That would be super easy and since we only have a microwave in the breakroom I can just plug in the crock pot to keep the food warm. Right now it's a tie between the meatballs and witches brew.
That good huh? I think I'll make it for the Halloween party we're attending this weekend.
I keep hearing about this. My boss (who's from Texas) says it's really hard to find and/or expensive in NYC though. Any tips on locating some?
