gluten-free?

I'm trying to rule out celiac disease with Gibson (he's pretty tiny for his age) I was told to do a gluten-free trial run and see if it helps. Does any one know where I can find some gluten-free recipes online that aren't super complicated to make? I like to keep weekday meals fairly simple (5 ingredients or less) I've been searching but some of the stuff I found sounds just plain nasty, like spaghetti squash tacos.

  • I have a friend who has to eat gluten-free things. I will send her an e-mail in the morning and ask her if she knows of any.  I kow she makes a great lasagna with gluten free noodles.  I know that our local supermarket has a lot of gluten free items you can purchase.

  • Here is what my friend said....

    Basically, anything that calls for pasta like lasagna, american chop suey etc you just use rice or corn pasta which they sell everywhere and as long as you use lots of sauce and cheese for extra flavor then it tastes just as good. Also, I have a great recipe for Mexican Lasagna and you just substitute with corn tortillas- I'll find that and email it to you. Plus, any type of stir fry served with rice is usually gluten free, especially if you make it from scratch/no packet. One thing that I just learned to make that I LOVE is risotto which is basically a creamy rice stir fry with veggies and chicken- so good!

    She said with this recipe she eliminates the balsamic vingegar and uses a 3/4 cup of cream instead and adds a few shakes of parm cheese at the end.  She also adds steamed broccoli, onions, peppers and squash cubes

    Here is her Mexican Lasagna Recipe

    3/4 jar of salsa
    1 can kidney beans drained
    1 1/2 bags of shredded cheddar
    1 packet of taco seasoning
    1 pound ground beef or turkey
    1 small can of corn drained

    Cook beef as directed on taco packet and add seasoning. Layer a casserole dish with five flour tortillas. Combine salsa, corn, beans, and beef. Spread layer of beef/salsa mixture over tortillas. Add a layer of cheddar cheese. Spread five more tortillas and then spread the remaining beef mixture. Top with remaining cheddar cheese. Cook at 350 degrees for 25 minutes.

  • I looooove spaghetti squash Bolognese (basically just spaghetti squash with meat sauce).

    I've been aiming to be wheat free for a while now (doesn't always happen) and it's not too hard.  Most of our dinner consist of some sort of meat (usually chicken, pork or fish) with lots of veggies on the side, maybe some brown rice too.

    I was looking at some blogs with good wheat/gluten free recipes a few weeks ago, but now I can't find it.  Boo.  I'll keep looking, some of the food there looked pretty tasty.

  • I have a good friend with celiac, so I've been learning about this.  Clean Eating magazine is good, and they tag their recipes, including gluten free.  CleanEatingMag.com is their website.  Bob's Red Mill has a large selection of gluten free products and baking ingredients.  I made their basic bread mix (in the bread machine) and you would never know it's gluten free.  Quinoa noodles are pretty good, or rice noodles.
