Easy Thanksgiving Desserts?

Looking for some tried and true easy dessert recipes. We're hosting 11 people on thanksgiving, so all the dessert baking will be done the night before.

Pumpkin pie is already on the list, per DH, but I'm thinking something apple and something chocolate also.  I'm not a very good pie maker, so I'm not sure if I can do an apple pie.

  • Apple pie is easy. Buy the Pillsbury ready made pie crust and follow the recipe. It's basically apples (cored, peeled and sliced), cinnamon, nutmeg (you can leave it out if you don't like it), sugar, flour and lemon juice mixed together. Pour it into the pie shell and top it with the second crust. Bake according to the box.  Just be sure to cover the edge of the crust with aluminum foil so it doesn't burn. Remove the foil halfway through cooking to let it brown a bit.
  • Oh, and pecan pie is pretty easy too. Get a frozen pie shell and then you mix sugar, corn syrup, pecans, flour. Pour into crust and bake. I'm not 100% sure off the top of my head at what temp or how long, but you can look up a recipe on foodtv.com or recipes.com. You can also just buy a couple of pies too. Good luck.

  • We always have chocolate pie at the holidays because it's a favorite for both my mom and me.  It's easy and really should be made the night before so the chocolate pudding can set. 

    You need a large box of Jello brand chocolate pudding mix (a large and a small might not be a bad idea) and a graham cracker pie crust.  Cook the pudding on the stove top according to the box instructions (important: do not use skim milk as it will have a negative impact on the taste/consistency).  You'll want to stand with the pudding because you really want to avoid burning it and this requires constant stirring.  Once the pudding is fully cooked poor contents of the pot directly into the pie crust, let it cool for a second then put the lid on the pie and refrigerate.  To avoid a hardened skin you may want to put a piece of plastic wrap directly on the pudding.

    I've noticed individual graham cracker pie crusts (I think there are 6 in a package) that you could use instead of the big pie crust if you preferred individual servings.

    THIS!-My favorite pie in the entire world! My grandma used to make this pie and then pop some popcorn when she would babysit overnight, she called it our dinner. :D Her pie always had a healthy dose (entire tub) of Cool Whip on top though. Stick out tongue

  • My favorite holiday pie is Tollhouse Pie - especially easy if you buy premade crust - you just mix all the ingredients and pour it in.  The inside is a goopy chocolate chip cookie taste and the top gets flakey and delicious.

  • I made this inside out apple crisp for supper club the other night, and it was FANTASTIC!! The presentation is super cute, and the dessert could not have been easier. You can make the caramel sauce & filling ahead of time, and bake the apples while dinner is going so the house smells delightful. I served mine with a scoop of vanilla bean frozen yougurt.

    Recipe

    Apples: 1 golden delicious per person, cored

    Filling: based on 4 apples, multiply as needed                                        1/2 cup rolled oats
    2 tablespoons butter
    3 tablespoons brown sugar
    1 teaspoon of pumpkin spice                                                                   1 teaspoon cinnamon

    Directions
    1. Preheat oven to 350 degrees
    2. Core and slightly hollow out the apples beyond the cored center. (Don?t go to far or the apple will loose its shape when baked).
    3. Mix together the oats, pumpkin pie spice and brown sugar.
    4. Soften the butter and add to the mixture, mixing gently until spread throughout.
    5. Lightly add the filling to the apples. (Do not pack inside or the mixture will expand and the apple will burst!)
    6. Bake for 30 minutes
    7. Drizzle with caramel sauce

    Caramel Sauce: 1 Cup sugar, 6 TB butter (salted), 1/2 Cup heavy cream. Melt sugar in heavy bottomed sacue pan on stove (2-3 quart size is good b/c mixture will bubble up), once all is metled, add butter and whisk together. Remove from heat, count to 3, and slowly sitr in cream. Volia!

  • just want to add re: apple pie... be sure to use granny smith apples, or another hard variety, like mcintosh or pink lady.  softer apples (gala, red/yellow delicious, etc.) get really mushy when baked. 

    apple pie is super easy.  the easiest, best crust out there cook's illustrated foolproof pie crust.  the vodka seems weird but use it... it's the best crust i've ever found and i've been baking pies for 30 years.  i left martha stewart's pate brisee recipe in the dust without a backward glance.

  • We always do pumpkin pie and apple crisp. Apple crisp is very easy - I usually peel and slice about 8 apples (green, like Granny Smith) and toss them in a bowl with cinnamon. Put them in the pie dish and cover with crisp topping: 1 cup each of flour, brown sugar, butter, and oats, plus about 1 teaspoon cinnamon and nutmeg. I usually end up doubling the topping because it's sooo tasty...
