I hope you guys aren't sick of me posting recipes here - I almost posted this on WC but decided against it. Anyway, anyone who carved pumpkins might appreciate this - I adapted it from a recipe on allrecipes.com
-Preheat oven to 275 oF
-Place 1 cup of rinsed and DRIED (I let mine sit out on paper towels in a single layer overnight) pumpkin seeds in a single layer on a baking sheet. For easy cleanup, I lined it with aluminum foil and sprayed it with Pam.
-Bake for 30-45 min, or until they start to turn golden, turning them every ten minutes or so.
-While the seeds bake, heat a large skillet on medium heat and combine 1 T butter and 1 T oil. Once the butter is melted, add 2 T granulated sugar. Keep an eye on this, and stir frequently until it becomes melted and caramelized. Turn heat to low and stir occasionally to keep from hardening until the seeds are ready.
-Combine 2 T granulated sugar, 1/2 T brown sugar, 1 t cinnamon, and 1/4 t salt in a medium bowl. Break up the brown sugar chunks and stir well (you may need to pop it in a food processor, or use granulated brown sugar if you have it. You can omit the brown sugar, but it really makes a a difference!). You can use 1 t pumpkin pie spice instead of the cinnamon if you'd prefer.
-Once seeds are golden, return sugar/butter mixture in skillet to medium heat and add seeds. Stir to coat.
-Transfer coated seeds to the dry sugar mixture in the bowl, and stir/toss to coat. Transfer to airtight container for storage.
The recipe I adapted this from said to allow the seeds to cool before serving, but Jeff and I were eating them immediately after they were made and they were pretty darn good, so it's up to you. I don't think these will last until the party we're going to at 6...We're already thinking about buying another pumpkin just so we can make more! Maybe Whole Foods sells pumpkin seeds in bulk?

Mine are not going over so well. But I think it's because half of our office is on a diet (myself included). But DH thought they were fantastic, so that's great.
