Share your best ("easy") crockpot chili recipe please?  DH and I wanna have a chili + football + couch day this Sunday!  TIA!

  • Turkey chili with white beans (from Epicurious)

    • 1 tablespoon vegetable oil
    • 2 medium onions, chopped
    • 1 1/2 teaspoons dried oregano
    • 1 1/2 teaspoons ground cumin
    • 1 1/2 pounds lean ground turkey
    • 1/4 cup chili powder
    • 2 bay leaves
    • 1 tablespoon unsweetened cocoa powder
    • 1 1/2 teaspoons salt
    • 1/4 teaspoon ground cinnamon
    • 1 28-ounce can whole tomatoes
    • 3 cups beef stock or canned beef broth
    • 1 8-ounce can tomato sauce
    • 3 15-ounce cans small white beans, rinsed, drained

    • Chopped red onion
    • Chopped fresh cilantro
    • Plain low-fat yogurt or light sour cream

    Saute the onions in the oil, add the turkey and brown it. Add the turkey, onions and the rest of the ingredients to the crock pot and cook on high for 6 hours or so.  
     
    I have made this a bunch of times and it's awesome (I use a mix of beans, not just white). The cocoa powder gives it almost a mole sauce type of flavor - yumm!

    2 lb ground beef, browned
    1 green pepper, diced
    1 yellow onion, diced
    4 stalks celery, diced
    2 cans red kidney beans
    2 cans diced tomatos w/juice
    1 jalepeno pepper, diced
    6 T chili powder
    1 cup black coffee (brewed)
    Mix everything together in the crockpot, cook on low for 8-9 hours for high for 3-4 hours. I serve with shredded cheddar, sour cream and corn bread!

    Holy cow that sounds good! I've never thought of adding coffee but it makes sense. I'm gonna have to try this.

  • Where's the beer in these recipes?? :-) Just don't tell DH that you used his beer for it ;-)

    And the best accompaniment to chili are corn-cake toppers (I make them with Rachael Ray's chili recipe which is not a slow cooker version but I'm sure you could make it in there, just might want to omit the chili in adobo b/c it might be REALLY spicy after cooking all day but I'm not sure)-

    1 box of jiffy- made to directions of corn pancakes; add 1 tbs cumin, chopped scallions and black beans if desired. Cook on griddle like pancakes until golden brown.
