Ideas for a quick and easy lunch for tomorrow.

Help!!  I need inspiration.

My parents are currently in Chicago.  They will be driving home tomorrow and said that they'd like to stop in GR for a quick visit with us and to have lunch.  So I need to figure out what we should do for lunch.  I would prefer to eat at home rather than going out, and I'd prefer to do something besides just basic sandwiches.

Complicating matters, I found out last night that my SIL and her new boyfriend will be at our house this evening and spending the night.  (This irritates me for several different reasons, but I won't go there now.)  I do not yet know if they will be around for lunch on Saturday.  I do know that with entertaining them, I won't have much time to shop and prepare lunch for Saturday.

So I need lunch ideas that would work for either four or six people and that will be quick and easy to prepare.  Ideas?

ETA: I just recieved a little more info.  SIL & BF won't be arriving until 7:00 tonight so at least I'll  have time to get to the grocery store (in addition to cleaning my house).  And they are planning to leave early tomorrow morning, before lunch -- so I don't have to worry about them for lunch.

  • Potato soup!  It's quick and pretty easy, and would be perfect on this chilly day.

  • Something in a crock pot-- chili, soup, etc.?  Or, you could make a baked pasta tonight, and pop it in the oven tomorrow for lunch.  Or, pick up a rotisserie chicken, some nice salad greens, etc. and do a hearty salad?

    You could also do broccoli cheese soup with some fresh crusty bread.

  • Pulled pork BBQ with Iron Chef Seasame sauce (found in the ethnic asiles at Meijer).  If you don't want to do pork, you could do beef. You could put it on low in the crockpot over night or on high first thing in the morning.

    Do chips, get some potato salad of slaw at Meijer deli. Brownie bites.  Yumm.

    I love eating pulled pork but I hate making it.  The giant hunk of meat full of fat and (sometimes) bone makes me Ick!.  Beef would probably cause the same problem?  I don't know... the only kind of beef I ever buy is ground.

  • Didn't you suggest the pumpkin chili recipe before on here?  I made it last night and it was delcious.  You could do chili and cornbread - seems like a good belly warmer with the current snow fall.  Any kind of soup would be delicious and you could serve it with some bakery bread (or homemade) or muffins or a salad.  Maybe a butternut squash or sweet potato based soup for the season.
  • You could do a quick veggie lo mein, it's been my go to quick dinner lately. Or spaghetti, garlic bread, and a salad?

    Oh, good idea!  I think I'll do something like that.

    I've made Pioneer's Woman's sesame noodles before and added veggies and they're really good.  And if I use frozen veggies, then it will come together super fast.

    You just have to take a deep breath and move fast. Try not to think about it. I'm not a big fan of dealing with raw meat either.  

    now if you had a Costco membership, you could get a giant size chicken pot pie.  Stick out tongue (I had to throw my love for Costco in there).

    My SIL LOVES costo's chicken pot pies.  That would be a perfect dish for a cold day...and easy for you too.
