  • I really suck at meal planning but here are a few of the things I have in the house to make. Plus I don't get home until 6:30 and H goes to bed by 9 because he gets up at 4:30 for work so I have a short window.

    Baked Chicken, baked potatos and a veggie

    Spaghetti and meat sauce with garlic bread

    meatball sandwiches and chips

    grilled cheese and tomato soup

    Tacos and rice

    Chili (hot chili!!)

     

    Your Mexican menu sounds delish!!  I could eat Mexican every single night if DH would go for it!

    6/28/10: Lost our sweet baby Addyston at 18wk 1day to pPROM 7/24/11: Michael William born at 24wk 2d due to IC after an emergent cerclage at 18wks, 4wk home BR and 2 weeks hospital BR. Grow strong our little Miracle! 9/17/11: Michael joined his sister in heaven after 8 amazing weeks with us on earth. He fought a very hard fight but NEC was too much for him in the end.     Tonight: Out to Uncle Yip's for my uncle's 70th bday

    Tuesday: Pasta with shrimp and vodka sauce (normally would make my own but using jarred since I got a ton for free at Remke)

    Wednesday: Island spice porkloin with mashed potatoes and some sort of veggie

    Thursday: Minestrone soup (from my freezer stash)

    Friday: Italian marinated chicken with Alton Brown's stove top mac and cheese

  • I don't really plan a night for each thing, just make it ahead and it can be taken out whenever.

    Goat cheese and asparagus stuffed chicken w roasted red pepper sauce
    Clean eating deep dish pizza
    Whole wheat lasagna with turkey meat sauce and spinach
    Crustless quiche thingies (that's the technical term)
    Salsa chicken

  • fish sandwiches and some leftover guacamole salad from a baby shower yesterday

    H: Homemade soup (haven't decided yet, but i have the day off work and can let it simmer all day!)

  • I think this may be the one time I'm glad my DH is such a picky eater...meal planning is a lot simpler when I have complete control over the menu and can make whatever I want! (We eat separately most nights, which allows me to make a big meal or two for myself each week and then have leftovers the other nights).

    So for me this week I'm making chili mac with ground turkey, black beans, onions, and peppers. This should get me 4-6 servings, so I can take some for lunches too.

    If I need another meal this week, I'll probably make stuffed chicken & vegetables (both are in the freezer ready to go). 

    The downside to this is that I may get tired of my "big meal" part way through the week. I hate to throw out good food though, so I'll eat it anyway!

  • Tonight: Frozen meal, H is going to the Bengals game.

    Tuesday: Fridays bag meal

     Wednesday: H is out of town, so maybe another frozen meal

    Thursday: Maybe go out to dinner because we are going to see Daniel Tosh at 1030

    Friday: I would like to make some baked ziti

  • Monday: Homemade Pizza and cheesy bread. (It's football night)

    Tuesday: I'm having dinner out with a friend so DH is on his own.

    Wednesday: Steamed Fish and mac-n-cheese.

    Thursday: Meatloaf.

    Friday: Tuna casserole

  • I have some left over chicken & tortillias so I'm going to make enchiladas tonight.  Trader joe's makes a sauce that DH loves.  A little spicy for me so maybe I'll do a wrap or something. 

    Rest of the week-not sure.  I'm trying to use up the food in our freezer b/c there is NO room anymore!   We had chili & sloppy joes more than once last week and there's still MORE in there but dh is burnt out on ground beef.  Turns out I'm burnt out on grocery shopping so he's going to eat more chili or starve Stick out tongue

  • Tonight eating leftover orange teriyaki chicken with rice. Tomorrow planning on making some shrimp linguine, and leftovers of that for wednesday. Hopefully we'll be eating out with my sister in connecticut for the rest of the week!
  • Tonight I had leftover Indian food. Tomorrow I'm going to have salmon (or whatever other fish looks good at Kroger) because H will still be out of town and he's rather allergic to fish.

    options for the rest of this week (depending on mood, time and energy):

    steaks (maybe with some gorgonzola if it's still good) with some kind of veggie and maybe rice.

    shrimp in tomato feta sauce with rice or pasta

    lemon chicken or spicy chicken drumsticks and some kind of veggie

    I think we have some pork chops in the freezer too. We usually fry them; sometimes I do a sour cream sauce on them.
