I seem to be getting home a lot later in the evening these days than I used to, which has led to a lot of meals picked up for DH at Whataburger on my way home the nights I'm not home early enough to cook a meal.
So I'm thinking of utilizing my crock pot more often, so that way if he beats me home and is hungry, he can just get to work on eating. Or if he chooses to wait for me, dinner's ready when I'm home and we can eat right away.
However, aside from pot roast and chili, I rarely use my crock pot. I have a crock pot recipe book, but I thought I would ask on here as well: What are your favorite crock pot recipes?

I made a modified version of this last week with black, kidney and pinto beans, plain diced tomatoes (DD doesn't like green chiles) and frozen green beans and corn. I happily ate the leftovers for lunch for 3 days. The ranch dressing mix is what makes it. Top with shredded cheese and a dollop of sour cream - YUM!
Beef Stew always cooks great in the crock pot.
All you need is stew meat, carrots, red potatoes, and oinions (if you like them in stew). Dump all of this in the crockpot, add a season packet for beef stew, water, and a little Worcheshire sauce. Stir it all together and set it on low for the reast of the day. Makes a whole bunch so I always have leftovers for lunch. I usually pair it with some cornbread.
I agree with the beef stew. I'm trying a new recipe tonight - we'll see how it tastes.
I also love taco soup. Yum.
Salsa Chicken!!!!!
Chicken Breasts, cover with salsa and cook on low for 6-8 hours.
Pour in a can of corn, can of beans and 8oz of cream cheese about 45 minutes before you're ready to eat.
Sometimes I make mexican rice to serve with it. It's SOOO yummy.
Ditto to the beef stew and salsa chicken recs. With my beef stew, I chop carrots, potatoes, celery, and onion the night before. Throw in with some beef broth, wor. sauce, red wine. Toss the beef with flour, salt, and pepper. We use the salsa chicken as burrito filling or eat alone with rice.
Something super easy is barbecue chicken. Slice an onion, put in bottom of cooker. Add 3-4 frozen chicken breasts. Season with salt/pepper, garlic powder, and wor. sauce, and cover with 1/3-1/2 cup of bbq sauce. Cook on low for 6-8 hours, on high for 3-4 hours. Serve shredded as sandwiches or eat as a main course.
shredded beef sandwiches: 2-3 lb chuck roast, sliced onion, 3 bay leaves, 1/3 cup cider vinegar, 1/2 tsp of cloves, 1/2 tsp garlic powder. Cook on low 10-12 hours. Serve on toasted sandwiches with greens and au jus for dipping.
Taco Soup
1lb ground beef, turkey
1 can black beans
1 can chili beans
1 can of corn
1 can of rotel
1 can of chicken broth
1 pack of ranch dressing mix.
Cook on low 6-8 hrs
