So B just texts me and tells me they are having a potluck Thursday at work and he would like me to make something, providing I have the time and if it's not too much trouble.
Of course I say yes and tell him we will talk about it in the morning.
So now, I am sitting here racking my brain on what to make for him.
Thoughts? They have access to a outlets, microwave and I believe a toaster oven.

I just made some pasta salad for my potluck tomorrow night.
Orzo
Grilled red, yellow, and orange peppers (skins peeled)
chopped green onions
mozzarella cheese
Kraft greek dressing
Easy! (The pepper part is a bit of a pain, and I had thought of just putting raw ones in, but they're soo much better cooked. If you let the skins get all black, they peel right off without too much fuss. Stick them in a ziplock straight off the grill and the peeling is even easier)
I've also added some chopped summer sausage to it before
You could make pumpkin pie dip...it's super easy and a huge hit, I have had to make it twice in two weeks for various social get togethers (by request)....people always kill the whole thing...
