Anyone have crockpot or freezer recipes they'd like share?

I'm looking for meals that I can throw in the crockpot or make ahead of time and freeze.  We're plain Jane eaters in my house so nothing with too many veggies or nothing too spicey.  Smile

  • I love this pot roast. Dh thinks it's better than the Modern Cafe pot roast. We usually boil some potatoes and baby carrots on the side but I think you could add them to the crockpot.

  • Here are 2 easy ones:

    Pulled Pork

    2 lbs Pork Tenderloin
    16 oz Root Beer
    Cook on Low 6 - 8 hours.
    Drain, shred meat, add back to crock pot, add full bottle BBQ sauce (Your choice) let warm up another 1/2 hour - hour! 
    Serve with Hamburger Buns

    Salsa Chicken 

    4 Frozen Chicken Breasts
    1/2 a packet of Taco Seasoning
    1 can of Cream of Chicken soup
    1/2 a jar of salsa
    Spray crock pot with some non-stick spray and then put all ingredients in the crock pot. Cook on low for 7-8 hours.  Shred the chicken.  Top with sour cream and cheddar cheese and eat with chips or tortilla.

    My mom makes pork chops (or beef) in the crock pot with a cup of ketchup, and a can of beer (all the alcohol cooks off.) You can also sub a non-diet soda in.  It tastes way better than it sounds, I promise!

  • I've made this recipe a few times which is adapted from Apple A day - the blog a PP mentioned. Friends have made it, too and have had success.

  • This is my usual crockpot meal:

    Potatoes & carrots on the bottom

    Meat on top of that (beef or chicken or pork)

    Then 1/2 cup of liquid - water or broth

    Thyme, bay leaf, salt and pepper

    Cook until it's done - usually like 7 hours on low, 4 or 5 hours on high

    Serve with salad and cous cous or brown rice.

  • 3-2-1 Beef. Super easy: 3 lb roast, 2 packets of italian dressing seasoning, 1 bottle beer. Cook on low for 4-6 hours. Shred and serve over noodles or Italian bread with provlone.

    Picante Chicken: 2-3 Chicken Breasts, 1 can black beans rinsed, 1 cup corn, 1 cup hominy, 1 1/2 cup salsa, slices of pepperjack cheese. Place chicken in bottom of crockpot, then black beans, then corn and hominy. Pour salsa over top. Cook on low for 6 hours. Before serving layer cheese over chicken and allow to melt.

    Honey Mustard Pork Ribs: 1 package country stle boneless pork ribs, salt and pepper, 1/2 cup chopped onion, 3/4 cup honey mustard, 2 T brown sugar, 2 cloves garlice minced. S&P ribs and place in crock pot, cover with onions, combine honey m...ustard, brown sugar and garlic. Pour over onions. Cook on low for 6 hours. Crockpot Brautwurst: 1/2 package brautwurst, 1/2 cup brown sugar, 1/4 cup spicy mustard, 1 small onion chopped finely. In crockpot combine brown sugar, mustard and onion. Cut brats into 1/4 inch slices and coat well with brown sugar mixture. Cover and cook on low for 3 hours, stirring occasionally.

  • I use the same crockpot recipe for pot roast that Bijou posted above (just made it Tuesday night actually) and it is sooo yummy! Super easy too. I half everything - use a 2-3 pound roast, 1 can soup, etc.

  • Chicken and dumplings.  I always add a bag of mixed veggies.

    Ingredients

    • 4 skinless, boneless chicken breast halves
    • 2 tablespoons butter
    • 2 (10.75 ounce) cans condensed cream of chicken soup
    • 1 onion, finely diced
    • 2 (10 ounce) packages refrigerated biscuit dough, torn into pieces

    Directions

    1. Place the chicken, butter, soup, and onion in a slow cooker, and fill with enough water to cover.
    2. Cover, and cook for 5 to 6 hours on High. About 30 minutes before serving, place the torn biscuit dough in the slow cooker. Cook until the dough is no longer raw in the center.

  • I just made this Tuesday and loved it!!!!  Brian went nuts and has been eating it for days since.

    Layer of onion slices on the bottom
    2-3 lbs of lean chuck beef
    1/2 packet of dry onion soup mix
    Rest of onion slices from one large white onion
    3 Carrots - Large slices
    3-4 bigger Potatos - Large chunks (because they'll sit for hours, the smaller they are, the mushier they become)
    4-6 cloves of garlic
    1/2 can of Coke
    1/2 cup beef broth

    Cook on low 8-10 hours

    About 1.5-2 hours before serving, I added more potatos, the other 1/2 of the onion soup mix, salt & pepper and a bunch of chopped dried rosemary for a really delicious, classic taste.

    I like to serve it over buttered bread to catch all the juices.

    For gravy (which I totally didn't need):  Put some of the juices in a pan on the stove, add a bit more beef broth, and some flour.  Whisk over high heat until thick.
