Found our vacation compromise!
So after a week of looking, we changed weeks and locations (6 times!) and found an all-inclusive hotel in the bahamas that after airfare, was only slightly more than we wanted to spend - but since it includes all alcohol and food, we decided it was worth the splurge. I'm so excited - sun and sand, here we come! Well, in about 5 months, anyway...
