Latest Blog Update: Peanut Butter Cookie with Salted Peanut Caramel
Nothing wrong with pasta and cereal. I love both!
Btw, crockpot is your best friend! I try to do at least 1 crockpot meal per week (this week is pulled pork). Set it to low for 8 hours while at work then mine will automatically switch to warm afterwards. Come home and enjoy dinner! Let me know if you want some recipes to try

Tonight: Chicken Squares (That's what I call them since I don't know the actually name. It's just cooked chicken mixed with cream cheese, butter, and scallions, stuffed in biscuits.)
Tuesday: Progressive Dinner with our neighbors. I'm making potato corn chowder.
Wednesday: Hugo for my birthday dinner!
Thursday: Pulled pork sandwiches
Friday: Thanksgiving dinner with different neighbors (mmm...deep fried turkey...). I'm making cornbread stuffing.
I propose that when we do these posts we link to recipes when possible!
I second the crock pot thing! Also, cooking is how I unwind from the workday, so in a way, it helps me get through it.
Also, this is my idealized meal plan.....meaning it's very possible that on any given night (probably Wed or Thurs when I'm getting worn out) I reserve the right to say screw it, it's Chinese take-out night.
Or English muffin pizza night!
A few weeks ago I found some really good crock pot recipes that I want to try. My problem is that I'm working 10+hour days lately and I'm afraid to do it and go home and whatever I make is dried out or dried up by the time I'm actually home to enjoy it. I don't see my hours going down at all for the next several weeks, either which is kinda sucky. I'm wondering if maybe getting a new(er) crock pot would help, though. Mine is old so it only does low and high on heat settings. For those of you w/ the ones that auto switch to warm afterwards, what brand do you have? Do you think even working a 10 hour day if I put something in before I left on low and then had it switch to warm automatically it would work out okay?..
I don't assign meals to days, just figure out meals for the week.
Last night we had linguine with shrimp in a lemon butter sauce.
The rest of the week:
Cilantro marinated orange ruffy with chimichuri rice
Cajun chicken breast with potatoes O'Brien and Bearnaise sauce
Tacos
Frozen ravioli with red sauce
Leftover night
The days may change, but the meals planned are:
Tonight: I'm in class, so DH is on his own. (= pizza rolls)
Skyline made at home
Chicken fajitas
Spaghetti bake with steamed broccoli and garlic bread
Leftover spaghetti bake with green beans and garlic bread
Macaroni Grill frozen dinner
Various other options. We just did our grocery shopping last night, so we're set for the next couple weeks at least.
Yes!! Mine is a crock-pot brand, and sometimes I work 10 hour days. Those are the days I'm most likely to use it! The only thing I tend to have a problem with is chicken - it does dry out. But soups, stews, beef, pork, etc. all turn out totally fine. Sometimes mine stays on FOREVER because then H gets home even later so I have to keep the food warm for him, and it's still fine.
And ps - if the chicken does dry out, it's still ok for chicken salad. We've saved more than one dinner that way. Although I've done a whole chicken in the crock pot and it turned out good, probably because it takes longer to cook anyway.
