Check out Rachael Rays website because I have seen her make a couple of dishes before with cranberries.
This recipe tastes like an apple dish to me. VERY YUMMY!! I always get asked for the recipe when I make it.
SWEET POTATO CRANBERRY CASSEROLE
Printed from COOKS.COM
2 (17 oz.) cans yams, drained
2 c. whole cranberries, raw
TOPPING:
1/2 c. flour
1/2 c. brown sugar
1/2 c. quick oatmeal (raw)
1/3 c. soft butter
1 tsp. cinnamon
Heat, drain and mash canned yams (or use 3 cups freshly cooked and mashed yams). Add cranberries and mix in. Set aside.
Combine in bowl the flour, cinnamon, brown sugar and oatmeal; stir to blend. Cut in the soft butter. Add 1 cup of topping to yams and cranberries. Fold in.
Put mixture in casserole. Place remaining topping on top. Bake 350 degrees for 35 minutes. Spread 1 1/2 cups mini marshmallows on top and place under broiler to brown lightly.
I found this recipe and I might actually make this one
http://www.fishernuts.com/fisher/reca_walnut_cranberry_crostini.asp
STUFFING WITH CRANBERRIES
1 cup chopped celery
1 small onion, chopped
1 stick of butter
1 large bag of bread
1/2 apple, chopped
1 Tbsp poultry seasoning
1-1.5 tsp of sage
handful of parsely
healthy handful of craisins
____________________________________
Grease 2 quart casserole
Cube bread, laid out to stale a little, then put in large bowl
In skillet, melt all but 2 Tbsp of butter
Cook onion until clear
Fill skillet with some of the bread, stir
Put all the bread back in the bowl with rest of ingredients, mix with hands
It has to be moist, so add 1/2 cup water or chicken stock, then Tbsp in more as needed.
Pat down in casserole
Smear remaining butter on top You can add a sliced apple on top
Cook for 45 minutes at 350, or 30 minutes at 375, uncovered.
(different temperature options exist if you have other things cooking already and need to put this in with it.)
