per sunshine's request, here is my recipe for homemade shepherd's pie. it is straight from my favorite award winning restaurant simon pearce (simonpearce.com)
1 pound ground beef
1 diced carrot
1/2 diced onion
3/4 of a 6 oz can of tomato paste
1/2 cu beef broth
1 tbspn worcestershire sauce
frozen peas and corn
mashed potatoes from 4-5 potatoes*
the hint to the mashed potatoes from this restaurant is to make sure to use real cream and real butter and add in a small handful of sharp cheddar cheese. make sure to make SMOOTH mashed potatoes, aka, in a food processor or something. make them and set them aside.
meanwhile, in a big skillet, saute the beef, onion and carrot with some EVOO. salt and pepper the beef. once mostly cooked, add the beef broth and simmer for a minute. then add the tomato paste and the worcestershire sauce. stir around and let simmer until nice and thick. throw in some peas and corn (eyeball however much you want).
grease a smallish (8x8) pan/casserole dish and pour in the meat mixture. then top with the potatoes. bake uncovered at 375 for 30-40 minutes until edges of potatoes turn brown. let it sit for about 10 minutes before serving.
NOTE: the recipe is actually double this, i just cut it down since it is only two of us. if you were making it in a larger casserole dish (like a normal size one for a family) then just double this. it is sooooo good, it has literally won awards from food network and food and wine magazines all over.
