Hey Ladies!
So DH and I are having a chili cook-off competition next weekend at our place, and because both of us are competitive, we are entering the competition seperately
DH is doing a trial run of his recipe right now, so I have been barred from the kitchen so as not to steal his ideas.
In any case, I am wondering if anyone has a favorite chili recipe that they could recommend. I was going to do an adaptation of a pumpkin chili recipe I found, but now I am worried it might be too "different." Maybe a white chicken chili? I don't want to do a standard chili, but I also don't want something that is too out of left field. So if you've got one, post your favorite chili recipe.

Re: Chili Recipes?
I make a chorizo chili that is good... I make mine spicy - use spicy chorizo and I add 1-2 fresh (not canned) jalapeno.
I don't know if it'll win a contest without some extra doctoring, but it's a great, reliable recipe.
When we make beef chili, we usually add a little bit of bourbon... it adds an interesting flavor. I don't have a written down recipe for beef chili, though.. we usually just add things as we make it.
Black Bean Chili
2 tablespoons vegetable oil
? cup chopped onion
? cup chopped green bell pepper
? cup chopped red bell pepper
? cup chopped celery
1 jalapeno pepper, seeded and chopped (optional)(used canned jalapeno if desired)
8 oz chiorizo sausage (hot or mild depending on preference)
3 cans 14-16 oz black beans
2-3 cups chicken broth
Cayenne pepper or hot sauce (optional)
In dutch oven or soup pot, saute onion, peppers and celery in vegetable oil until tender. Add sausage and continue to cook, crumbling sausage. In the meantime, using food processor or blender, puree one can of beans without draining. Drain and rinse remaining two cans of beans. Add puree, drained beans and chicken broth to sausage mixture. Simmer for 15 to 20 minutes over low heat. Adjust seasoning to taste. Serve with shredded cojack or cheddar cheese, sour cream and tortilla chips.
4-6 servings

i think that this vegetarian chili is A-MA-ZING.
i do sub veggie stock for the water, double the spices and only rinse half the beans to make it thicker.
with the coriander and cumin, i think it's a standout and the bulgar makes it really "meaty" and filling.

This is delicious and super easy because you make it in your crockpot!
White Bean Chicken Chili
- 4 cans white beans, drained and rinsed
- 3 boneless, skinless chicken breasts, trimmed of fat
- 8 ounces Pepper jack cheese, cut into 2-inch cubes
- 2 cups salsa
Combine the beans, cheese, and salsa in a crockpot. Nestle the chicken breasts into the mixture, and cook on low 6-8 hours. Remove chicken breasts, shred with a fork, and return to crockpot. Stir to combine, and serve with desired garnishes.My Bio
