looking for a recipe

It is the cheesy potato casserole that is made with frozen hashbrowns.  Anybody got a good one?  DH has requested it for the holiday.

  • This one's my favorite.  It's a recipe I found online and then tweaked it.  :)

    1 (32 ounce) package frozen hashbrowns
    8 ounces cooked, diced ham
    1 small to med. onion, diced
    1 can cream of potato soup
    1 can cheddar cheese soup
    ~3/4 of 16 ounce container of sour cream
    2 cups shredded sharp Cheddar cheese
    1 cup grated Parmesan cheese

    1. Preheat oven to 375. Lightly grease a 9x13 inch baking dish.
    2. In a large bowl, mix hash browns, ham, soups, sour cream, and Cheddar cheese. Spread evenly into prepared dish. Sprinkle with Parmesan cheese, and some add'l cheddar if desired.  
    3. Bake 1 hour in the preheated oven, or until bubbly and lightly brown. Serve immediately.

    **You can leave out the ham and/or onions if you prefer it without.

  • I make this all the time...  it's my most-requested addition to potlucks/parties, lol.

    For a full 9x13 glass pan:

    2 blocks of cream cheese (I use one regular, one neufch?tel)
    2 sticks of margarine or butter (I use light margarine)
    1 medium tub of sour cream (I use light)
    8-12 oz. of shredded cheddar cheese, divided into two halves
    salt & pepper
    1.5-2 bags of frozen shredded or cubed potatoes

    Pre-heat the oven to 400.  What I do is melt the first three ingredients plus half of the shredded cheese in a saucepan on the stove top.  Once it's all melted together, I pour it into a large bowl and mix it with my hands or with a sturdy spoon until everything is coated together.  I spray a 9x13" glass pan with cooking spray and spread the mixture into the pan.  Cover liberally with the rest of the cheese and then cover the whole pan with foil.  I always bake it for about 45 minutes to an hour and during the last 15 minutes, I remove the foil and allow the cheese to brown slightly. 

    It's so simple, but soooo good.  ;)

  • I've made a similar recipe before in a crock pot and doesn't get browned on top, but it's convienent if you're taking it somewhere
