dinner ideas

Once again I'm asking for ideas for dinner tonight. I'm home baking pies all day, so I doubt I'm going to feel like cooking a big production dinner tonight. I'm actually looking for crock pot recipes. I have to run to the store in about an hour anyways, so I can pick up whatever I need them.

Any ideas? Doesn't have to be crock pot as long as it's easy & not a lot of dishes.

  • My favorite crockpot recipe right now is for salsa chicken:

    1 lb frozen chicken breasts

    1 cup salsa

    1 can cream of chicken soup (no milk or water added)

    1 packet of taco seasoning

    Combine all four ingredients and cook on low for 8 hours. Shred the chicken in the crockpot to absorb all of the liquid.  You can mix in a 1/2 cup of sour cream or buy that white, melting cheese (like they serve at Mexican restaurants) to drizzle on top.  Serve on rice or as a filling for tacos.  

    YUM!

  • I'm making burgers for dinner.  Not much effort goes into that, and I get to use my grill pan.

  • We've been on a salad kick.  Although I'm kinda lettuced out..so I may talk DH into ordering in.  Shouldn't be too hard to do!!! LOL.
  • My go-to is usually salsa chicken, especially because I use my crockpot as much as possible.

    Today I just threw in a few chicken breasts, a can of cream of chicken, and a can of cheddar cheese soup!

    We've also been doing lots of chicken salads - those don't require to much thought, which I really like!

    Also - you might not have everything on hand but you should try this sometime.  It's seriously amazing and it takes like 5 minutes.

  • I'm not good with the crock pot, so I don't have any recipes for that but here is our favorite go-to meal as of late:

    Boil noodles (I like spaghetti for this but we've also used penne and bowtie), reserve 1 cup of the water before draining.

    Dice up one or two avocados into a bowl. Pour lemon juice over the avocado (I use half of one lemon). Add a handful or two of bleu cheese on top.

    In the meantime, cut up some bacon and fry it until it's super crispy. Drain it but keep a bit of the fat in the pan. Cut up an onion and fry it in the bacon fat. Add salt, pepper, and some dried basil. Add in some chopped garlic towards the end. Add the onion mixture to the bowl with the avocado. Add some of the pasta water (you might not need the whole cup) and mix it until it starts getting saucy but leave some of the avocado chunky. Add the pasta and the crispy bacon and toss together. Serve and garnish with a little more bleu cheese, some leftover crispy bacon, and fresh chopped basil (I actually prefer it without the basil but DH likes it).

    Devour.
