Bakers come in: Pie recipes

I'm going to attempt to make 3 pies for thanksgiving this year. I have Never made a pie, ever. I'd rather use a recipe that one of you have used and love, instead of looking in my Better H&G cookbook, or google.

Also is pre-made crust better to do for my first time?

I should add I'm not really a fan of pies, so I don't have a preference as to what type, I just need one to be pumpkin. I'm not afraid of baking from scratch, I just need easy to follow directions, since I'm a pie Virgin and have none of my own moves.

  • i greatly dislike pie.  Except chocolate cream pie.  So my suggestion is to make one of those for people who don't like fruit in a shell.  :)  Sorry, no recipes because I never made a pie other than peanut butter pie from www.jif.com
  • Honestly, when it comes to pumpkin pie I've always just used the recipe straight from the Libby's pumpkin puree can and I think it tastes delicious!

    Pie crust is known for being a PITA.  If you are really afraid of working with dough, there are some good pre-made crusts out there.  I think Trader Joes has a good one, but someone else may have more suggestions.

    The only time I've made a pie crust before it was the Pate Brisee from the Joy of Baking website.  Most of the time I don't eat the crust b/c it's bland and dry, but this one was really buttery and tender, so I was a fan.

    Other than pumpkin, I agree that someone is bound to like a chocolate/French silk pie, and pecan pie is usually at hit this time of year.  Good luck!!

  • There are 3 recipes on my blog right now! I posted them last week. The pumpkin and pecan ones I have made before. You will also read on there about why I don't do homemade pie crust. Both pies are delicious, but the pumpkin one is really amazing and I get requests for it every year.
  • I do pumpkin from the libby can. Pecan from Pioneer woman.

    Crust is cake to make but it's just as good to just the store bought kind.

     Everyone loves it and its super easy, no baking required.  I just buy a graham cracker crust from the store.  I like it better then regular pumpkin pie.

  • I love apple pie.  Here's my recipe:

    6 Apples - combo of types (I usually use Jonathon and Granny Smith), peeled and sliced

    3/4 cup sugar

    1/4 brown sugar

    1 table spoon cinnamon

    1/2 teaspoon nutmeg

    1/4 flour

     Simply toss all ingredients and pour into pie crust.  Top with second crust.  Whip one egg yolk with a tablespoon milk.  Brush egg mixture on top of pie crust and bake at 425 for 15 minutes.  Reduce heat and bake at 350 for 45 minutes or until golden brown.

    I make my own crust.  The key is chilling it for at least 4 hours but ideally over night.  If you don't have time to chill it's a real pain in the arse.

    If you want to give it a go:

    Take 2 cups flour and a teaspoon salt and slowly fold in 2 sticks of butter (not margarine!).  Then add a quarter cup of water until you can form a ball with the dough.  Refrigerate and then separate into to balls.  Roll out each ball until you have two 10" circles.  Place one in bottom of pie pan and trim edges.

  • The only pie I make is a peanut butter pie, and I have a fear of pastry crust too,  I'm a cookie crust kind of baker.  The peanut butter pie (I don't have the recipe on me, or I'd post it) is really good, I add a layer of choc ganache between the cookie & peanut butter mixture as a surprise treat.

     I'm trying a new pie tonight, chocolate orange marscapone pie, but I've never tried it before so maybe I'll be recommending it next year.... maybe not....

    I always use the grocery-store brand frozen pie crusts, and I like them.

    If you do this one, I think others suggest an add'l 2 tbsp flour b/c it's runny otherwise.

  • sweet potato pie is easy and has a lot more flavor than pumpkin pie. i'm making ours now; here's the recipe:

    1 - 1lb sweet potato

    1/2 c unsalted butter softened

    1 c white sugar

    1/2 c milk

    2 eggs

    1/2 tsp ground nutmeg

    1/2 tsp ground cinnamon

    1 tsp vanilla extract

    1 9" pie crust

    Boil potato for 40-50 minutes or until done. Run cold water over sweet potato and remove skin. Break apart potato in a bowl. Add butter and mix well with mixer. Stir in sugar, milk, eggs, nutmeg, cinnamon and vanilla. Beat on medium speed until mixture is smooth. Pour filling into an unbaked pie crust. Bake at 350 degrees for 55-60 min until inserted knife is clean.
