How to keep butter fresher in the fridge?

My butter inevitably absorbs smells in our fridge, despite the fact that I put it in the butter compartment (though I don't really re-wrap it tightly, which might be my problem).  What can I do so that my butter stays fresher?  Freeze most of the sticks and only pull out one at a time?  Get a true butter dish?  I've already got a box of baking soda in my fridge, but that doesn't seem to help a ton.

  • Weird; I just keep mine in its wrapper and it doesn't absorb smells.  Maybe wrap your other stuff tighter?  I don't know that my fridge has smells.  Although it's probably easier to just put the butter in something airtight like a ziploc or a glass container with a lid.
  • I leave my butter on the counter in a glass butter dish.
  • I bake a lot so butter doesn't last too long.

  • I only pull out what I use, everything else is in the freezer.  I don't know if it has to do with freshness, but that's what my mom does so it's what I do.
  • Well, I only put 1 stick in the fridge at a time. The rest go in the freezer.  And the stick goes in the butter compartment.

    But I have to say.... I don't smell my butter on a regular basis so I actually haven't noticed if it's absorbing the smell of food in the fridge.  So - a part of this kind of baffles me.  Are you smelling your butter a lot?

  • Hmm.  Do you put stinky stuff in your fridge?  My butter never smells.

  • I keep butter for baking and cooking in the freezer, and butter for eating on the counter in a butter bell.

    I do this also, except that it's ceramic.  I do understand that everyone doesn't like this--DH thinks it's unsafe.  OP, you might want to try the plastic butter containers that basically seal like Tupperware.  I'm not sure why your butter is absorbing these odors, but those things should definitely keep everything out.

  • I keep butter in a standard butter dish in the cabinet. Stays soft and doesn't pick up any fridge smells.
  • How do you know that your butter is absorbing smells? I have never had this problem and I just leave the stick of butter open with the paper folded over in a compartment in the door of the fridge.
  • Sorry--I should have clarified (no butter joke intended):  It tastes different than when first opened.  I buy unsalted butter so I can control the amount of salt in my baking/cooking.  If the stick has been in my fridge for a week or more, it doesn't taste as pure.  
  • I have the same issue.  I've thought about starting to keep it in a pyrex or tupperware container with a lid - but, haven't done it yet.

    A lot of my butter stash is kept in the freezer.  I don't have this issue with the butter stored there - but, it's kind of a pain if I forget to pull it out, and want to bake something.

    I had the same problem and tried everything. I just discovered a great way: I use one of those hand pumps for vacuum sealing food and put it in a mason jar. I blogged it:

  • I bake a lot as well, so butter doesn't stick around long.  I cut off the amount I need, paper and all, and leave the rest wrapped securely.  You could try that and then at least only the end would maybe get smelly.  I'd probably store it in a Tupperware container if I had this same problem.

    Also, regarding pulling it out of the freezer to bake--I do this all the time, just zap it in the microwave for 3-4 minutes on 20% power and it's ready to go!  I run a baking business out of my home so I never seem to have enough butter softened when I need it!
