What's on your menu this week.
I am out of ideas, and sick of cooking.
So far this week I have black bean soup, and some sausage potato dish I just saw on allrecipes.com
What're you having this week? I have to go grocery shopping bc we are grocery poor. We don't even have bread.lame.

DH and I are both major fattys and if we eat out one more time we're liable to pop.
So I'm putting us on a strict protein and veggie dinner for the next 2 days (while he's still home)
After he leaves i'm having salad for dinner nightly.
Must.stop.eating.junk.
But since you need ideas, what about meatballs? meatloaf? feta stuffed chicken breast? turkey buffalo burgers on mini bagels (hey don't knock it til you try it!)? pulled pork tacos?
I love meatballs, but every.single.time I've made them they are burnt. I'm obviously doing SOMETHING wrong, but I can't figure it out.
How do you make them?
We love meatloaf. Maybe I should make that this week. I try hard to keep the red meat consumption to a minimum, but that might be a good meal this week.

I'm pretty spontaneous when it comes to my weekly menu but I've made a few things lately that were really awesome and not too hippie-dippie grains and veggies type of meals (cause I've got lots of those too).

Leftover pork casserole tonight, burgers tomorrow night and Wednesday (have HOA meeting on Tuesday night, so need something quick as we'll both be getting home late) and chicken enchiladas on Thursday and Friday.

Pulled pork tacos are super simple (just an fyi pork is a red meat, in case you didn't know, most people think it's a white meat because of those commercials) I don't have the recipe on hand and can't remember the exact amount of Cocoa powder you use so i'll get back to you on that one...
My meatballs I make similar to my meatloaf (sorry no exact measurements I just eye balls it) I use Italian bread crumbs, eggs, pepper, garlic, onions, Worcestershire sauce, oregano, parsley, and whatever else I want to throw in there. Then roll them up in a ball (I do big balls - ha) place it into a glass baking dish, pour spaghetti sause and bake at 350 for 20 mins, then flip the balls, then bake 20 mins more, adding more sauce to keep it moist.
I always check the internal temp with a thermometer to determine "doneness"

Oh! and just use ground turkey for the meatloaf... add A LOT more Worcestershire and it will taste just as good. I find you have to over season ground turkey or it's way too bland.

Fish tacos with chilli aioli! Yum!
I use Tilapia and coat it in Chilli powder, pan fried with olive oil.
Then for the aioli just mayo, chilli powder (enough to turn it orange) and cumin. YUM!
hore away! All that looks delish! I'm now following your blogs. The three you listed are things that I would actually attempt. Sometimes I get SO overwhelmed when I look @ other peoples cooking blogs.. I think, how inthe hell do they have time to cook up these elaborate meals. I don't have time for that. Or, It just looks like way to much work. I like good food, but right now, I honestly do not have 2 hours to spend in the kitchen.
I wrote down the stuff I don't have at home already for the bean soup, and chili burritos.. the other looks like it might take some time (that whole roasting the garlic thing)
Hm, actually I never thought about what pork was.. I always just thing cow=red meat and that's it.
Hm, I'm intrigued by the meatballs! Might have to try that out.
I am only cooking two nights this week....not sure how that happened.
Tomorrow I am making a cranberry port tenderloin in the crockpot and Wednesday a pumpkin penne pasta. I love fall flavors!
