All right ladies, I need your help
I'm really bored w/ our dinner menu lately and am trying to find some new recipes to try. So if you have a favorite meal please share it with me! I need quick, easy, inexpensive meals. I rarely feel like cooking after working all day. DH cooks some days too, but he's still learning so the easier the better 
If it helps we eat a lot of chicken and ground turkey

king casserole is easy and yummy!
1 can each of rotel, cream of mushroom, and cream of chicken
1 bag of shredded cheese
a few chicken breasts (or canned chicken works too)
and corn chips (tortilla kind)
in a casserole dish (or cake pan), cover the bottom with corn chips-and smash em down
boil then chunk up your chicken breasts and scatter on top of chips
mix up all 3 cans of soup/rotel.... pour mixture over the chicken, cover with shredded cheese and bake til cheese melts!
YUM!

I just made chicken noodle soup in the crockpot for my first time yesterday. I LOVE my crockpot and now that it's winter I'm craving soups.
The recipe is pretty basic:
*If you do a small, whole roaster chicken with no skin, use 8 cups of water
*If you do boneless-skinless chicken breasts (I used 1 lb) use 8 cups of low sodium chicken broth
1 cup chopped carrot
1 cup chopped celery
1 cup chopped onion
1 garlic clove, minced
2 bay leaves
1/2 tsp. dried thyme
salt and pepper to taste
3 cups uncooked egg noodles
- Combine liquid with veggies and seasonings, place chicken on top of veggies
- Cook on low 8-10 hours or high 4-5
- Remove cooked chicken and shred or cube (and remove bones if using a whole chicken), place back in crockpot.
- Add egg noodles and turn crockpot on warm, or just turn it off. The noodles cook quickly so it doesn't need heat for more than 7-8 minutes.
I made this yesterday and it was really good! I also added some sliced cremini mushrooms and rosemary. You could probably add any other veggies that you want and it would turn out great!

I'm really trying to work on my menu plans and cooking skills. I love that so many of us have been talking food lately. I spent a lot of time looking over my recipes this past weekend. Here's a few of my past successes (there aren't many - lol!) that I dug up:
Baked Mostaccioli (this is a handy dish when having people over for dinner)
Ingredients
1 Lg. jar Ragu sauce with meat
1 lb. Mostaccioli noodles, cooked
1 lb. Small curd cottage cheese
1 lb. Mozzarella (grated)
1/2 c. Grated Romano cheese
2 Eggs
1/4 c. Dry bread crumbs
Preparation
Mix all ingredients except sauce and 1/2 lb. mozzarella.
In 9x13 inch pan put about 1/2 cup of 3/4 cup sauce on bottom of pan. Spoon in pasta and cheese mixture. Spread more sauce on top just to cover. top with remaining mozzarella. Bake at 375 degrees for 30 to 40 minutes until bubbly and browned. Let stand 15 minutes before cutting in to portions. Heat remaining sauce and serve with mostaccioli.
BBQ Cups (recipe direct from my mom
she made this all the time when I was growing up, it is still a fave of mine and it's super easy)
Ingredients
1 can Pillsbury biscuits - Mom uses flaky
1 lb Ground turkey
1 cup Shredded cheddar cheese
1/2 Chopped onion
1/4 cup Brown sugar
2 tbsp Mustard
1 cup Ketchup
Preparation
Preheat oven to 350. Brown ground turkey with onion. Add brown sugar, mustard and ketchup. Let cook about 15 minutes or until done. While ground turkey is cooking, place biscuits in muffin pan, pressing up to the sides. Shred cheese. When turkey is finished, place about two tablespoons of meat into the muffin. Sprinkle with cheese. Bake about 10-12 minutes.
You may need to purchase two cans of biscuits because you might have more meat. If you don't want to use in the cups, you can put on a piece of bread for a sloppy joe sandwich or put into spaghetti sauce.
Pot Pie (I'll use diced chicken breast or ground turkey and fat-free or low-fat condensed soup)
Pepperoncini Beef (probably one of the easiest recipes I've ever seen)
Ropa Vieja in a Slow Cooker (This isn't cheap, but is so freakin' delish!)
Glazed Pork Chops (I made this on Monday without the lemon juice, DH was in love)
I've had this cookbook for a few years and hadn't used it until last week - I never realized how handy it is! 3, 4, and 5 Ingredient cookbook. I've made three dinners from it since Friday, each had only 3 ingredients and each was really good. Here are some similar ones. I know B&N carries these or similar in their bargain area.
