again, no measuring, bc I suck...but here ya go! 

 latkes

some potatoes (2 big regular baking potatoes work best)

1 large yellow onion

salt

1 egg

matzoh meal (very important, not to be confused with bread crumbs)

shred potato and onion.  i usually use the food processor for this.  SO quick.  do the potato first, remove to a bowl and then the onions. BUT, the onions KILL my eyes when I do this, so wear ski goggles if you have them.

THEN, VERY IMPORTANT, take the shredded items (still separate) and SQUEEZE them dry over the sink.  i put them in a colander and press and press and press until no more liquid drips out.  it is messy.  once all drained of liquid, combine in a bowl.  add the egg.  add a handful of matzoh meal and some salt.  using your hands, mix all together.  if the mixture feels too wet, add more matzoh.

in a skillet add 1/2" of cooking oil.  then form the mixture into flat palm sized pancakes.  put a few in the HOT oil.  when the edges are golden, flip.  cook thoroughly,  then remove to a paper towel.

 my fave way to eat them is sprinkled with salt and then with apple sauce on them.  but others prefer plain.  or with sour cream.

or if you are like G you add ketchup.  sigh.

    But of course they have to include some uncommon ingredient. I wonder if I can find matzoh meal at our super Walmart. If not, I already found that Amazon sells it. 

    And so many topping options. I think I'll have to try them all. If it makes you feel any better, I know when I make them, Tom will definitely put ketchup on them.

    EDIT: Oh yeah, I think I cook too much. I've almost become immune to onions now. I have no idea how it happened though. 

  • ok, matzoh meal can be found (especially at this time of the year) at any grocery store that has an international aisle.

    also, i can chop onions galore.  like last week i made a jewish kugle that called for 7 onions.  i chopped them until my fingers hurt, no teary eyes.  but in the processor?  im telling you, it gets all into the air.  its awful.

     and yup, i erally do wear goggles when i make them! 

  • I have a mandolin I've been wanting to try out. I'll have to find out if its better on the eyes than the food processor.
  • oh yes, a mandolin with shred it just fine!  and will likely be less painful on the eyes!
