christmas cookies

Last night Don asked me if I'd make a bunch of different Christmas cookies to have around the house this year.  I said I would even though I don't need all those sweets in the house, but what the he11 it's Christmas and it's not like I have a wedding dress I'm trying to fit into anymore!  :D

So, since I need ideas for different kinds...what are some of the staple Christmas cookies that you make?

  • Peanut butter

    Oatmeal (not oatmeal raisin because I don't like raisins)

    SNICKERDOODLE (my absolute most favorite-ist cookie evar!)

    sugar cookies (decorated with royal icing, with hershey's kisses stuck in them, with Reeces pieces on top, or any other candy really)

    classic chocolate chip

    I'm also going to make sugared pecans, chocolate covered pretzel sticks, and some other random candies I can't remember at the moment. 

  • My fam always used to make pignoli cookies and these other amaretto cookies with cherries in the middle. Trav's mom makes the cookies with hershey's kisses in the middle and these peanut butter cookies with reeses in the middle that you make in mini cupake trays.

    Now I want to bake!

  • Christmas Cookies!  I'm having Richard leave the butter out for me to soften before he leaves for work.  That way when I get home I can start baking.

    This year I'm putting together canisters with cookies & goodies for our families.  I'm including:

    Chocolate Almond Brittle

    Peppermint Bark

    Raspberry Linzer Cookies

    Lemon Shortbread Cookies

    Spiced Shortbread Cookies

    Sugar Cookies

    That's it for now.  I've been looking at cookie recipes on foodnetwork.com and allrecipes.com.  I'm sure I'll add more cookies to the list.

  • I love peanut butter blossoms, but we are suckers for peanut butter so we make them with mini reese's instead of hershey's kisses. You can also roll the cookies in colored sugar for an extra-festive look.

    LTB pretty much stole my ideas, except I make oatmeal walnut, sometimes with chocolate chips.  Snickerdoodle is my #1 fave, and a close second is these brownie cookies, sometimes called chocolate pixies:

    I roll them in powdered sugar before baking though, rather than sprinkling after.  I usually don't get up the energy to make and decorate sugar cookies, but they're definitely a classic.  You could also make those cookies with the hershey's kiss on them, I don't know what they're called.

  • Everything mentioned above makes me want to gain about 100 pounds in cookies this year... mmmm...

    We like the peanut butter (classic, with hershey kisses in them)

    I make regular chocolate chip, but mix it up a little b/c H likes white and butterscotch chips better...

    I also sorta like these ones my mom used to make that she called snowball cookies... rolled in powdered sugar and I think they had coconut in them... ANyone have the REAL name or a recipe?

    ETA: Also, it helps if you are going to be the only one eating them, put a few of each kind (maybe 10 or so) out and freeze the rest to pull out when the others are gone... That way they don't go stale and you don't have to eat them all quite so fast... :)

    AMAZING idea!  It's just going to me and Don eating them...ALL!
    I've never froze cookies...boring me!
    Should I just pop 'em in the freezer once they're baked and cooled off OR freeze the dough and make them as needed?

  • I think in most cases you can freeze either the baked cookies or the dough.  easier if you freeze the baked cookies, though...less work & can pull them out on a dime for company.

    I make Margarita cookies - a 'light' alternative to all the chocolate/peanut butter heaviness this time of year. You even roll them in salt before you slice/bake them - awesome.

  • They're not really cookies, but I usually demand black bottom cupcakes mixed in with my christmas cookies.

    DH is usually chief christmas cookie baker in out house :)

  • Margarita Cookies

     

    Makes about 50 cookies

     

    Cookies:

    2 sticks unsalted butter, at room temp

    2/3 c confectioners? sugar, sifted

    2 large egg yolks, separate, at room temperature

    Pinch of salt (or two)

    2 tsp tequila

    Grated zest of 2 limes

    Grated zest of half an orange

    2 c all-purpose flour

     

    Coating:

    ? c clear sanding or other coarse sugar (I used regular granulated sugar)

    1 ? tsp flaky sea salt *

     

    Beat the butter until smooth, then add the confectioners? sugar & continue beating until smooth & silky.  Beat in one of the egg yolks, salt, tequila, grated lime & orange zest.  Reduce the mixer speed to low and add the flour, beating just until it disappears.  (Better to underbeat ? if it?s not all mixed in, finish it up with a rubber spatula).  Gather the dough into two balls, wrap each in plastic wrap & refrigerate for 30 minutes.

     

    After chilling, form each piece of dough into a log that is about 1 to 1 ? inches thick.  Wrap the logs in plastic & chill for 2 hours.

     

    Preheat oven to 350 F.  Make the sugar/salt coating.  *If using regular table salt, or any salt of a finer consistency, reduce salt by half, at least.  Place the sugar coating on a sheet of waxed paper (for easier rolling, less mess).

     

    Remove the logs from the fridge & brush with the remaining egg yolk.  Roll the logs in the sugar mixture, pressing gently to get it to stick if necessary (orig recipe suggested rolling the coated logs in wax paper/plastic wrap sushi-chef-style to get the coating to stick).  Slice the logs into ? in thick cookies.  Bake on parchment-covered cookie sheets 11-12 minutes until set but not browned.  These cookies don?t expand much, so you don?t need a lot of room between them.

     

    Better underbaked than overbaked.  I slice them a little thicker to achieve this.  Also, if they get brown they're overdone.
