Latke Recipe

Since Hanukkah starts tonight, I will share my latke recipe with you guys! 4 large russet potatoes2 eggs1 tsp Kosher Salt1/4 tsp black pepper1 yellow onion1/4 C (a little less, a little more) of flour
Shred or grate the potatoes as well as the onions in a food processor. Add in the eggs. Then the seasoning. Now the flour. Take mixture and place into a colander and let drain; or you just place the mixture inside a bowl lined with a paper towel. The bottom line? Drain the excess "juice" from the mixture. This is super duper important.
Next heat oil in pan. Make patties from mixture. Place patties in pan and cook about 3-4 minutes each side, until golden brown.Makes about 8 Latkes, give or take, depending how big you make them. Num Num Num.
