Latkes Latkes Everywhere!

So in honor of Hannukah today, we made latkes at work. 40 latkes. That's a lot. Now, I am making more latkes for dinner tonight. And this weekend, I will be working Latkapalooza where we will have, you guessed it, MORE LATKES! Pretty sure I will be latked out by Sunday night :)

  • Holy Latkes. Any good recipes recs? I saw one for apple latkes on smitten kitchen, thinking of trying that tomorrow. But you know, there are EIGHT days.

  • Well, I did baked latkes this afternoon. Good, but took a long time! For dinner, I made Cooking Light's Jalapeno-Cilantro latkes which were super super yummy!

    The only problem with making latkes is the oil, which is kind of necessary and a part of the whole "Hannukah" thing. But, I seriously smell like fried potatoes right now!

  • I just made some last week with Jullienned potatoes fried in peanut oil. Those were AMAZING!

     

    It was roughly

    1 cup flour

    3 large eggs

    salt and pepper

    five large russet potatoes peeled and jullienned

    one large yellow onion diced

    Then fried in peanut oil

     

    Mmmmm I can never have enough latkes

     Thanks, that's helpful. I can't believe i went to the grocery store yesterday and forgot to get potatoes! But in any case, I don't think we have peanut oil either so I will have to make a quick stop there. 

    How much oil? is it like "fill a high sided pan and make a puddle" type of thing?Or more like regular pancakes where you just have to get the pan nice and greasy? 

    Yes I grew up with this stuff but I barely can remember it.

  • My FIL makes potato ball latkes...with the fry daddy...the whole house smells like oil, so I would recommend doing them outside or in the garage if you can. My favorites are the regular potato with chili flakes and the sweet potato latkes...with LOTS of sour cream...mmmmm, so good!

    Also, my recent edition of Cooking Light has tons of different latkes recipes I want to try.

    I've made them before and I just greased the pan. It's sort of like making hashbrowns. Latkes are yummy.
  • YUMMMM. I could never get enough of fried potatoes  :)  Must be the Jewish genes.

    @Amy - I have a decent recipe for plain ol' potato latkes at home if you want me to email it to you. I'm still trying to perfect it but it's a good basic one.

    yes, please, that would be good! and I don't think fried potatoes are exclusive to Jews, we got French fries, potato chips, hash browns, tater tots, and home fries.And I'm probably missing something.  Must be universal!

  • I love latkes. I tried to make them myself once. It was a big fail. Sigh, I need more Jewish friends, they're all back east.
