You guys HAVE to try this!

Saucy Coconut Shrimp - I LOVE shrimp, Dave is not fussy about it.  When I told him I was making shrimp for supper, he wasn't thrilled...and then he tasted it.  He shovelled the whole plate into his mouth and then said "Can you make this again next week?"  It is THAT good. 
 
1 tsp. oil
1/2 lb. (225 g) uncooked deveined peeled medium shrimp - I bought the frozen stuff that has been detailed too, I didn't want to have to mess with it at all.  Just open the bag, dump it in the pan.  Easy.
2 cloves garlic, minced
1 tsp. crushed red pepper
1/4 cup canned light coconut milk
3 Tbsp. Crunchy Peanut Butter - I only buy organic peanut butter, so it is just peanuts, nothing else added.  It was perfect, and while any kind of peanut butter would be fine, I think that the stuff with sugar added might be a bit too sweet...but that's just me.
3 Tbsp. lime juice
2 tsp. lite soy sauce
1/4 cup thin mango slices

HEAT oil in medium skillet on medium-high heat. Add shrimp; cook 1 min. Stir in garlic and crushed pepper; cook and stir 1 to 2 min. or until shrimp turn pink. Transfer to bowl; cover to keep warm.

ADD all remaining ingredients except mangos to skillet; cook on low heat 3 to 4 min. or until peanut butter is melted and sauce is well blended, stirring frequently. (Do not bring to boil.)

STIR in shrimp and mangos; cook 2 to 3 min. or until heated through, stirring frequently.

 

I served it over white rice.  And now I'm drooling again.  If you like shrimp, you will love this, if you don't like shrimp, you will probably still love this.  Seriously.

  • Oh and I would also like to add, it's a great meal to make when you're pressed for time!  We got home from the gym late last night (like 8:30pm) and started supper then.  It went from all ingredients in the cupboards/freezer to on a plate and in our mouths in less than 20 minutes!  That's faster than cooking a frozen pizza!

    I am excited there is finally a recipe that we can eat. We don't eat red meat or poultry, but we eat lots of seafood. If you have any other shrimp or fish dishes please share!

    Mimi, we eat fish once a week.  I have a good recipe for potato chip crusted haddock that is delicious too, let me find it and I'll post it!
