Potato chip crusted haddock
4 fillets frozen wild haddock fillets, thawed according to package directions
1/2 cup finely crushed potato chips (the best is Sea Salt and Malt Vinegar kettle cooked chips!)
2 tablespoons fresh parsley, finely chopped
2 tablespoons green onion, finely chopped
1/2 teaspoon fresh rosemary, finely chopped (neither H nor I like rosemary, so we just leave this out)
1 teaspoon lemon zest (have made it without this in a pinch, and just sprinkled a bit of lemon juice over the fish instead)
2 tablespoons light mayonnaise
Preheat oven to 400 degrees.
Place haddock on a parchment paper-lined baking sheet and pat dry. Toss crushed potato chips with parsley, green onions, rosemary and lemon zest and set aside.
Spread an equal amount of mayonnaise over each piece of fish. Gently press crumb mixture onto the fillets. Bake for 12 minutes or until fish flakes when tested with a fork.
It's great with steamed vegetables.

Absolutely! I just love haddock, and it's really plentiful around here, so that's what I use.
I am from an area that is famous for it's seafood, it is plentiful and really cheap. This is why I always laugh when I see tv shows and movies where people go out for lobster and talk about how extravagant it is...everyone eats it all the time at home and it's no big deal...as a kid we were always like "ugh, lobster AGAIN?"
So we eat a lot of salmon, scallops, haddock, lobster...I am not a fan of mussels or cod but there is a ton of that too.
Just another reason why seafood chowder is our Christmas Eve meal here

Have you tried haddock? It is a good fish for people who don't like fish. It is really non-offensive, doesn't smell "fishy", doesn't taste "fishy"...it is basically the chicken of the fish world. Like, you can cook it and no one would know that you had fish for dinner that night
Fish is beginning to sound like a non-word to me because I just used it so much in that paragraph. Fish fish fish fish fish.
I'm not sure if I have.. I always try everything but generally the texture is too much for me and I am totally uninterested after that.
DH's friends mom invited us over for dinner and she made perch and walleye.. I tried both and with enough lemon juice and tarter sauce I actually enjoyed the walleye. It was a big step for me.
Maybe I'll try to make haddock one day.
