Help me w/ my kitchen knife collection
I want to boost my knife collection but it's not the cheapest thing to do, so I'd like to slowly start adding to it. What knives do you think I need?
Right now, I have Wusthof (from Crate & Barrel from our wedding registry):
- 3.5" paring knife
- 6" utility knife
- 8" chef's knife
- 8" bread knife
1) What brand do you recommend (something not too pricy, not cheap either)
2) What knives can't you live without that aren't already on my list?

I recommend Wusthof. There's lots of levels of Wusthof though. I recommend getting nice knives because they're an investment.
I almost only use my chef's knife and bread knife. I have some Santouku (sp?) knives and used it all the time before I got a chef's knife but miss the rocking when I try it now. I have a reverse paring knife which I like. It's good for slicing strawberries and things in your hand and using your thumb as a stop. I've used my boning knife a couple times.
My knives are from the Henkles Pro S collection and I've been very happy with them. Not sure how they compare on the price scale, though.
I cannot live without my Santoku knife.
my next knife will be a shun boning knife. I like Shun because they ave left-handed handles - they're a d-shape the fit nicely in my palm.

Or a cleaver, or mezzaluna.
I also have Henckel and Wustohf knives - both of which are very nice.
We have the Shun classic and I've been really happy with them. The ones that I use the most are the chef's knives (I have both 6" and 8") and the bread knife. I also have that one that EmmieB linked and I love it. It's great for tomatoes!

Here's another one I really like
It's designed for cheese. The cheese doesn't stick or get squished. It's also great for soft fragile things like tomatoes and hard boiled eggs. the one pictured is the R?sle? Cheese Knife
We have the fun Shun Ultimate one as well & use it all the time. DH loves our cleaver- he doesnt know how he went so long without it.
My favorite knife in our collection is my 4" Santoku knife. I *think* it is a Henkels, but it might be Wustof. It is not too big, but not too small & has a good weight to it.
I personally like my knives to have a little weight to them- I don't feel as in control if they are super light.
I have Henckels Twin Pro S. I would not get cheap knives.. I dont really think they are worth it. I'd save up to get something nice. Occasionally you can find some at TJ Maxx.
I'd also get your knives sharpened every few years
They will seem brand new again.
I have a 5" serrated knife and a 2 3/4" paring knife. I use both often. I also have a set of nice steak knives that I use in a pinch for general serrated knives.

On another note, I had never heard of the reverse paring knife that MrsBoomBoom noted, so I went to google it. And this post of yours is number 6 in the search results!
