I usually use a small roaster bird or game hens...put it in the crock pot with enough water to cover it and slow cook high for 6 hours. It cooks the meat and start to make a broth. Then I'll pick the bird, put the meat back in, add chicken broth or stock or bullion if you don't have the other two, add all my veggies. If fresh veggies I'll put it back on high for a few hours...canned or frozen I just keep in until hot. Add in salt/pepper/garlic/ whatever seasonings your like. For the noodles, do not cook them (or rice) in the soup! It will turn the soup very starchy and pretty gross. I cook them separate and add them in about a half hour before serving.
Of course this is the long version. I'll usually start it on a Sunday and have it for dinner on Monday. You can save time by just boiling the chicken separate, saving the liquid and then transferring everything to the crock pot for several hours.
