Recommend your favorite/best Gluten-Free resources

My best friend was just diagnosed with Celiac Disease and needs to live a Gluten-Free lifestyle now.  Do you have any favorite Gluten-Free resources/websites you can share with me? 

I'd like to compile some info for her in support of her new diagnosis.  I am sure she is overwhelmed by a lifestyle change.  She is married with a 1 year old. Any other ideas/tips for supporting someone with Celiac Disease?

  • My sister got a good deal of support and information from the Celiac Disease Center at Columbia University in NYC. Their website isn't great, but it can get you started to contact them.

    I think part of the denial of the diagnosis is that need to replace all of your gluten-rich foods with non-gluten substitutes. Like, "I can live gluten-free and not change anything!" And people just get disappointed with the results (both in taste and price).

    Frankly, a great friendly resource is to just go through your favorite recipes and products to see what is already gluten free, or easily GF adjusted. So many products are listing themselves as gluten free on the label, but many are not. Take the time to call the 1-800 number on the label of her favorite products and see what she can and cannot eat. Like, Wise Potato Chips are GF, so are most Corn Chips. Peeps are GF. And lots of fodd companies will mail you their list of GF products.

  • If you Google Karina's Kitchen, you'll find some good recipes.

    I recommend Tinkyada pasta and Udi's bread/pizza crust/muffins.
