Recommend a recipe...

I need some ideas for a pot luck recipe. My thought is to use the crockpot as it will be easy to get to work and plug in and there really is not other cooking options at work, other than a microwave. Thanks!

  • How many people will be there?  I ask because the list so far sounds really entree heavy.  It would be nice to have some veggies, chips, fruit, etc.  Is that planned too?

    If you want an entree, a slow cook chili might be nice.

  • It is entree hearvy because our unit has entrees. Other units have dessert, appetizers etc. Its a very large group always plenty of food, my plan is to make a crockpot full of something and once its gone its gone...everyone always dreads the year their unit is picked for entrees.... Smile

  • What about a taco or fajita bar? you could keep the pulled chicken, steak or beef warm in the crock pot (with some liquid like chicken stock so it doens't dry out) and then provide the fixings.

    I was going to say soup, but there are already two.  Chili is an option that would be quite a bit different then the two soups already there.  I also made a really good ancho pork and hominy stew a few weeks ago.  At least it would be different flavors from what is already going to be there.  here is the recipe for that:

  • Are there any vegetarians to consider? If so ... there aren't any vegetarian items listed above. Chili is easy to make as a vegetarian option and it's still hearty and filling. Here's an example of a recipe, I haven't made this specific one, but have made similar chili and it's great!

  • Could you do like a goulash or something that you could just use the crockpot to keep it warm?
  • I love to do au gratin potatoes in the crockpot. They cook well and people do not usually bring them, but they are great filler, something vegetarians can eat, and typically go well with anything. Here are three different varieties.

  • Or homeade mac n cheese would be good! I don't have my recipe handy, but there are plenty out there and you could put any of them in a crockpot to keep warm.

  • A pasta dish of some sort might be nice, like baked ziti or tortellini/raviolli (or mac & cheese, like pp suggested).  The entrees so far are very meat-heavy, and it might be nice to offer something a little lighter and/or veggie friendly...  I know there are even crock-pot lasagna recipes, though I haven't tried them myself...

    I've made these calico beans recently and they are super delicious! I put them in a crock pot because it was a potluck and they were a hit.

    A couple of changes I made to the recipe. I used apple cider vinegar instead of white wine vin. ,used dijon mustard instead of mustard powder, omitted the celery, and added 3 tbls sweet bbq sauce. Also, the Van De Camps pork and beans work best. I used Kraft? real bacon pieces in the package by the bacon bits rather than browning bacon.

    Ingredients

    • 1/2 cup bacon, chopped
    • 1 pound lean ground beef
    • 1 (15 ounce) can pork and beans
    • 1 (15 ounce) can kidney beans, drained
    • 1 (15 ounce) can butter beans
    • 1 (15 ounce) can lima beans, drained
    • 1/2 cup ketchup
    • 1 cup packed brown sugar
    • 1 cup chopped onion
    • 3 tablespoons white wine vinegar
    • 1 teaspoon mustard powder
    • 1/2 cup chopped celery

  • Beef stroganoff. If you make it beforehand, you can throw it in the crockpot to keep warm. You could double the recipe for a large group. I LOVE this recipe and it is super easy.

    1 lb ground beef

    1 small white onion, chopped

    1 8 oz. container sour cream

    1 10 oz. can cream of mushroom soup

    1/2 bag of egg noodles

    Salt and Pepper to taste

    Brown the ground beef with the onion, and drain.  Reduce heat to low and add sour cream, mushroom soup, and salt and pepper. Cook on low until warmed through.  Serve over cooked egg noodes. (OR, mix with egg noodles, and throw in the crockpot!)
