Fish Recipes, Please!

I'm on a fish heavy diet per doctor's orders and I'm getting bored with the one way I usually cook my fish: broiled w/ lemon juice & dill.

I'd love to hear some new yummy ways to prepare it.

  • DH made this with cod recently and it was sooooo good.  I tried it with tilapia last night and it doesn't work nearly as well. 

    I also like this phyllo-wrapped salmon recipe and this slightly sweet grilled salmon recipe.  All super easy to make, which is the only kind of cooking I do!

  • I love seasoning it with pesto (any kind, not just regular basil pesto).

  • I use this sauce with tilapia all the time...it's delicious!

    Mix together 3 tablespoons each of honey, balsamic vinegar and soy sauce. Marinate fish for about 20 minutes before you bake it.

  • I like to wrap it in parchment with either lime, onion, cilantro and sliced jalapenos or lemon, kalamata olives, tomatoes and thyme. Bake it at 450 for about 15 minutes. I also make this Rachael Ray recipe where you bake the fish with a little panko breadcrumbs mixed with cayenne pepper and make some vegetable lo mein on the side (I just use whole wheat spaghetti). I also just made a new recipe for the healthy cafeteria menu at BU for fish tostadas. Just brush a whole wheat tortilla with a little olive oil and sprinkle some cumin and bake it at like 425 for 10-15 min until it gets crispy (flip halfway through). Then sprinkle the fish (white fish is probably best) with cayenne, cumin and chili powder and top it with thin slices of lime and bake in the same oven for about 10 min. Then saute some corn, black beans, red onions and red bell pepper on the stove with more cayenne, cumin, and chili powder. Pile the fish (I usually flake it into pieces) and corn mixture on top of the tostada and serve it with whatever you like (I usually do quick homemade pico de gallo and avocado slices). I made it during a food demo and it took less than 30 min and was SO good!
