Dessert Recipe suggestions

We are having our Girls Night Christmas Celebration on Monday next week.  The hostess is doing breakfast for dinner: quiche/casserole, homemade waffles, breakfast meat, etc. 

I am bringing dessert.  Would like to do something that isn't too heavy but really nummy.

Ideas/recipes?  TIA ladies!

    Oreo Peppermint Bark, from Sing for Your Supper

    Ingredients

    1 lb dark chocolate bark
    1 lb white chocolate almond bark
    1/2 tsp peppermint extract
    1/2 c crushed peppermints
    10 Oreos, roughly chopped

    Melt the chocolate bark in the microwave in 30 second increments, stirring to keep it melting evenly.  When melted, pour onto a sheet of waxed paper and spread into a thin layer (I used waxed paper on a cookie sheet in fear it would go everywhere, but I totally could have skipped that part).  Then let cool for 15-20 minutes at room temperature or pop into the freezer for about 10 minutes if you?re running short on time.

    Melt the white chocolate bark the same way and add the peppermint extract.  I?m not sure if this is normal, but the extract changed the texture of the melted chocolate, and it refused to pour properly.  It spread just fine, but it was far more solid than pre-extract.

    Sprinkle the chopped Oreos and crushed peppermints evenly on top.  You might want to press them into the chocolate a little to make sure fewer of them fall off during the breaking/chopping process.  Then let it cool completely and break or chop into small pieces (ours was too thick to want to break).

  • i'm always a big fan of cut fruit/berries, fresh whipped cream and angel food cake. light, fairly healthy and delicious!
  • This is really good. It's not breakfast food, but it's a fun dessert.

    What about monkey bread? I know a lot of people have that for breakfast, but you could turn it into a dessert. Maybe with some whipped cream or even a scoop of vanilla ice cream?

  • If you wanted to stick with the breakfast theme, you could do small chocolate waffles garnished with whipped cream and drizzled with chocolate sauce... or even mini-Belgian waffles with berries and whipped cream.

     Or, a similar flavor profile, but more classicaly dessert-y: cream puffs or chocolate eclairs?

    (Sorry, I don't have specific recipes in mind...just tossing some ideas out there!)

  • I just tried cake balls for the first time this weekend, and they're amazing.  They are fairly rich, but you only need to eat 1 or 2, so it's not too bad overall. :)

  • I made this Fruit Salsa and Cinnamon Chips recipe for my last girl's night.  One girl ate the salsa with a spoon.  It was a huge hit.  I used what was on sale and in season, so my version was tweaked a bit.  I used frozen strawberries in syrup and cut out the sugars in the recipe all together- just adding a little lime juice (which is in my best friend's version of this).  Then I used raspberries, blackberries, lots of kiwi, and the apples it calls for.  I did make the chips, but you could also purchase cinnamon pita chips.
