Great Ideas for the Holiday

My DH and I love this cake. Not to sweet but not dull. Its a great cake to have wtih hot coco or coffee! I am new to this page and thought i would pass along this great idea for dessert. Its super easy to make from scratch!

 

APPLE CAKE

o 3 LARGE EGGS

o 2 CUPS OF SUGAR

o 1 CUP VEG.OIL OR BUTTER (I USED COUNTRY CROCK LIGHT)

o 2 TEASPOONS VANILLA EXTRACT

 

 

CREAM THE ABOVE INGRIDENTS WITH MIXER (MEDIUM SPEED)

 

 

o 3 CUPS OF FLOUR

o 1 TEASPOON BAKING SODA

o 1 TEASPOON SALT

o 2 TEASPOON CINNAMON

 

 

STIR TOGETHER UNTIL WELL MIXED, POUR INTO ABOVE

BATTER GRADUALLY. UNITL WELL MIXED WITH MIXER,

 

IF THE BATTER GETS HARD, ADD MILK TO SOFTEN MIXTURE.

 

o PEEL APPROXIMATLEY 3 TO 4 APPLES DEPENDING ON SIZE

o REMOVE CORE OF THE APPLE

o CUT INTO PIECES (APPROX 4 CUPS)

 

 

POUR APPLES INTO MIXED BATTER, AND MIX WITH A SPOON (DO NOT USE MIXER!!!)

 

ADD PECANS OR WALNUTS DEPENDING ON YOUR TASTE

OR BOTH AND ONLY MIX WITH THE SPOON. NO MIXER!!!!

 

POUR INTO A 11 X 13 LIGHTLY GREASED PAN AND BAKE AT 350

DEGREES FOR APPROXIMATELY 1 HR, (EVERY OVEN IS DIFFERENT)

 

 

MY PREFERENCE IS WALNUTS.

  • Is this a pretty flakey cake or rather dense?  (Does that make sense?)  The reason I ask is because when I was little, my mom had this amazing apple cake recipe that everyone loved.  But, she lost it and I haven't been able to recreate it.  I was just wondering if this could be similar.  She made hers in a bundt pan, do you think this would hold up in that type of pan?
