hey!

I'm using my portable roasting oven to roast a turkey this week, and remember that you used one for Thanksgiving.  How did everything come out?  Did you brown it in the oven at all?  Did you use a fresh or frozen bird?  I just looked up the Alton Brown recipe you used but I bought a frozen turkey, so I don't need a brine.  Do you have any advice for me?

    You should definitely still brine even if it's frozen.  Thaw first then brine it, makes a HUGE difference in taste & juicy-ness Smile

  • ditto kate, brine anyway! alton brown's recipe should include how to brine (even if it's a frozen turkey)

  • Hey there!  I didn't brown it in the oven (they both had other things baking/warming up), but I would recommend it since it doesn't brown at all in the portable.  The portable oven I borrowed from my mom only goes up to 450^.  Alton has you set it to 500 for the first 30 minutes.  I kept it at the high temp for a little longer - maybe closer to 45-50 (plus I wanted to accommodate the time it took to preheat).  It seemed to cook a lot quicker than I expected, but it came out pretty good.  Good luck!
