Veg sandwich suggestions?
So on Christmas eve day, before the big family party, we're doing presents and lunch with our immediate family. Since Dad can really only eat soup (radiation on your throat sucks balls) we're doing soup and sandwiches. I'm bringing the sandwiches. I'm thinking simple little sandwiches, like turkey and tuna salad on dollar rolls. Step mom and step sister are veggatarians. I was going to do cucumber sandwiches, but am looking for suggestions outside that.

I've got an excellent basil egg salad w/sundried tomato mayo if you want the recipe.

As a card-carrying vegetarian, I would love to be served Fallin's sramich (tm Matt). Great flavors, not too much stuff to drip or fall out, won't get soggy, etc.
I love ciabatta bread but it can be a bit much to wrestle with.
