Re: sugar cookies
I have one on my blog that i really like-- I was never really into sugar cookies before so I haven't made a ton but they taste really good!
I love love love the basic sugar cookie recipe in the joy of cooking. Happened to have it in my email, so here it is.
Rich Rolled Sugar Cookies ? p. 827-28
2 ?-3 ? doz ( 2-3 inch cookies)
Beat on medium speed until very fluffy and well blended:
? lb (2 sticks) unsalted butter, softened
2/3 cup sugar
Add and beat until well-combined:
1 large egg
? tsp baking powder
1/8 tsp salt
1 ? tsp vanilla
Stir in until well blended and smooth:
2 1/3 cups flour
Divide dough in half. Place each half btw 2 lg sheets wax or parchment paper
Roll out to scant ? in. thick, checking underside and smoothing creases. Keeping paper in place, layer the rolled dough sheets on a baking sheet and refrigerate until cold and slightly firm but not hard ? 20-30 mins.
Position a rack in the upper third of oven. Preheat to 350 degreesF. Grease cookie sheets.
Working with 1 portion of dough at a time (leave the rest in the frig), gently peel away and replace the paper (with fresh piece) to make it easier to remove later. Peel away and discard the other piece. Cut out cookies. With spatula transfer them to cookie sheet ? spacing about 1 in apart. Roll dough scaps and continue cutting out. Refrigerate dough if it gets too soft in this process. Decorat with colored sprinkles or sugar unless planning to ice later.
Bake 1 sheet at a time, just until cookies are lightly colored on top and slightly darker at edges. 6-9 minutes. Rotate tray during cooking to get even browning. Remove sheet to a rack and let stand till they firm a bit then transfer cookies to a rack to cool.
is it a drop cookie recipe? those are easiest for me..i'm no good at rolling! I'd be interested in trying it!
